BAKED PANKO CHICKEN FOR ONE

This crispy panko chicken is easy to make, add potato wedges & vegetables to make a one pan dinner. Depending on how thin the chicken breast is, it can cook in 20-25 minutes.

Chicken Mayonnaise Dijon mustard Panko crumbs Smoked paprika Garlic salt

INGREDIENTS

Add mayonnaise and  dijon mustard to a shallow bowl or plate. Mix together.

STEP 1

Prepare panko coating by adding panko crumbs, smoked paprika, and garlic salt to a shallow mixing bowl. Stir together. Press down to crush panko with a spoon or your hand.

STEP 2

Pound chicken. Pat chicken dry with a clean towel or paper towel, if needed.

STEP 3

Place chicken in mayonnaise and dijon mixture. Cover all sides with mixture.

STEP 4

Transfer to panko mixture. Press chicken into mixture, then flip and press other side. Cover all sides with panko mixture so it's all covered.

STEP 5

Place on rack on baking sheet. Spray top of chicken with cooking spray. Add sides, if desired.

STEP 6

Bake at 425 degrees until internal temperature of thickest part of chicken reaches 165 degrees F. About 20-25 minutes.

STEP 7

You can cook frozen vegetables and potatoes with the chicken. Add to rack on baking sheet with chicken.

Serve with your favorite sides.
