BANANA BLUEBERRY OATMEAL MUFFINS

Banana blueberry oatmeal muffins are an easy one bowl muffin recipe. Make a batch ahead of time for quick snacks and breakfasts for the week. They're tender with browned crispy edges on top.

Butter Very ripe banana Sugar  All purpose and whole Wheat flours Baking powder Kosher salt Lemon juice Blueberries Oats Turbinado sugar (optional)

INGREDIENTS

Add granulated sugar, softened butter to medium mixing bowl. Beat with hand mixer until mixture is smooth and fluffy.

STEP 1

Add ripe bananas, egg, milk, and lemon juice to batter. Beat until smooth.

STEP 2

Add all purpose flour, whole wheat flour, baking powder, salt. Beat on low and until just barely incorporated.

STEP 3

Add blueberries and oats to mixture. Carefully fold them into batter with rubber spatula.

STEP 4

Using a large spoon or cookie scoop, divide batter evenly between 12 muffin cups. Sprinkle turbinado sugar over each muffin.

STEP 5

Bake at 375 degrees F for 15-18 minutes.

STEP 6

Spread peanut butter over muffin, if desired. Enjoy.
