GNOCCHI CARBONARA FOR TWO

Silky gnocchi carbonara is an easy fancy meal you can make at home. It's done in about 30 minutes, and has deep buttery, meaty flavors.

Gnocchi Pancetta, salami, or ham Egg Parmesan cheese Lemon juice Frozen broccoli/green beans

INGREDIENTS

Boil gnocchi according to package directions.

STEP 1

Heat cast iron skillet over medium heat. Add chopped meat. Cook until browned, about 3-4 minutes.

STEP 2

Mix sauce. Crack an egg into a small mixing bowl, grate parmesan cheese into bowl, add a bit of hot gnocchi water, and lemon juice to egg. Whisk until all incorporated. Set aside.

STEP 3

Save 1 cup of remaining gnocchi water, and set aside. Add gnocchi to meat in skillet. Spread gnocchi out into a single layer on pan. Cook until gnocchi is browned on at least one side.

STEP 4

Remove pan from heat then add egg mixture. Stir. Add gnocchi water a bit at a time to thin out the sauce. Return to low heat, simmer until sauce is desired thickness.

STEP 5

Enjoy immediately. Eat by itself or with a simple vegetable.
