HERBY CHICKPEA AND GRAIN BOWL FOR ONE

This Mediterranean grain bowl just takes 20 minutes to make, is made with a few pantry staples, most of which can be swapped for what you already have. Oh and it's delicious.

Olive oil Red wine vinegar Oregano Pepperoncinis + juice Kosher salt Dijon Farro Cucumber  Chicken Chickpeas Arugula Tomatoes Kalamata olives Feta

INGREDIENTS

Cook farro, according to cooking directions.

STEP 1

Add olive oil, red wine vinegar, oregano, pepperonini juice, kosher salt, and Dijon to a jar. Screw on lid, shake vigorously.

STEP 2

Add about 1 Tablespoon of dressing to chicken. Cook in a skillet over medium heat for about 5 minutes per side.

STEP 3

Add a large handful of arugula, cooked farro, chickpeas, sliced chicken, tomatoes, kalamata olives, crumbled feta, and sliced pepperoncinis.

STEP 4

Drizzle dressing over salad. Enjoy immediately.
