MEDITERRANEAN GRAIN BOWL

This tangy Mediterranean grain bowl for one is ready in 20 minutes. It's full of lots of pantry ingredients, most of which can be swapped for what you already have.

Olive oil Red wine vinegar Oregano Pepperoncinis + juice Kosher salt Dijon Farro Cucumber  Chicken Chickpeas Arugula Tomatoes Kalamata olives Feta

INGREDIENTS

Cook farro, according to cooking directions.

STEP 1

Add olive oil, red wine vinegar, oregano, pepperonini juice, kosher salt, and Dijon to a jar. Screw on lid, shake vigorously.

STEP 2

Add about 1 Tablespoon of dressing to chicken. Cook in a skillet over medium heat for about 5 minutes per side.

STEP 3

Add a large handful of arugula, cooked farro, chickpeas, sliced chicken, tomatoes, kalamata olives, crumbled feta, and sliced pepperoncinis.

STEP 4

Drizzle dressing over salad. Enjoy immediately.
