NO BAKE PUMPKIN CHEESECAKE BARS

No bake pumpkin cheesecake bars (small batch) can be made in about 20 minutes and ready to eat in a few hours. They're easy and have a great spiced pumpkin flavor. Use ginger cookies, graham crackers, or oreos for the crust!

Gingersnap cookie crumbs Butter Salt Cream cheese  Pumpkin puree Sugar Heavy whipping cream Pumpkin pie spice Vanilla extract Apple cider vinegar

INGREDIENTS

Line 8x8 pan with parchment paper. Set aside.

STEP 1

Stir together gingersnap crumbs, melted butter, kosher salt. Crumbs should be wet looking, and hold together when pressed.

STEP 2

Press cookie crumbs into pan. Use the bottom of a measuring cup to press it together.

STEP 3

Mix the following ingredients until smooth: cream cheese, pumpkin puree, granulated sugar,  heavy whipping cream, pumpkin pie spice, vanilla extract, apple cider vinegar, and kosher salt. Bake at 350 for 30-35 minutes.

STEP 4

Transfer to pan, smooth over crust.

STEP 5

Refrigerate for at least 4 hours before serving. Freeze for best results.

STEP 6

Slice and top with whipped cream and gingersnap crumbs.
