ingredients

bell pepper        black beans rice                      broth veggies               salsa taco seasoning

STEP 1

dice bell pepper/other veggies

STEP 2

Heat up diced bell pepper, rice, taco seasoning, pinch of salt, and oil. Cook until peppers become soft.

STEP 3

Add broth, salsa, tomato paste to pot. Stir, cover, and reduce heat.

STEP 4

Simmer for 15-20 minutes, or until rice is soft.

STEP 5

Add black beans, corn. Stir and cook until warm.
