SPINACH SALAD WITH MANDARIN ORANGES

This 15 minute spinach salad with mandarin oranges for one is a perfect flavor packed vegetarian salad. 

Spinach or mixed greens Mandarin Oranges Olive Oil  Broccoli Ginger Pistachios Edamame

INGREDIENTS

Mix together dressing-mandarin orange juice, olive oil, grated ginger, and a pinch of salt.

STEP 1

Prepare the veggies: defrost the edamame, chop broccoli.

STEP 2

Add spinach or mixed greens to a serving bowl, then add broccoli, edamame, and chopped pistachios.

STEP 3

Peel mandarin oranges. Cut thin slices. Remove seeds, then add to salad and finish off with the dressing. Toss.

STEP 4

Enjoy immediately. Add crusty bread or grains if desired.
