Microwave Egg in a Cup

Easy microwave egg in a cup (or mug or bowl) is a super quick breakfast. Cook 1.5-2 minutes for fluffy souffle-like eggs. Add whatever toppings you like for a quick tasty breakfast in less than 10 minutes from start to finish.

  • microwave safe cup, mug, or bowl
  • fork
  • Measuring cups, spoons

Ingredients

  • 2-3 eggs
  • 2 tablespoons milk of choice
  • pinch of kosher salt and pepper or to taste
  • see notes below for optional toppings

Instructions

  • Crack 2-3 eggs into a microwave safe cup. Add 2 Tablespoons milk, beat with fork. Make sure it's only ½ full.
  • Add desired toppings such as cheese, protein, vegetables, etc. 
  • Place egg mixture in the microwave. Cook on high for 1.5-2 minutes. Stir and enjoy. If still really undercooked, cook another 30-45 seconds. If mostly cooked remove from microwave, it'll continue to cook just a bit. 
  • Top with sliced tomato, if desired. Enjoy.

Notes

  • The texture of these microwave eggs is really nice, it's like an egg souffle
  • Make sure to use a cup, mug, or bowl that's big enough that the egg mixture only fills about ½ of the container. It will rise when cooking, then deflate a bit after it's done. 
  • You can mix all ingredients together and refrigerate overnight for a really easy breakfast.
  • Use this microwave egg in a cup method if you like scrambled eggs in an egg sandwich, they hold together well and are perfect on bread/bagel, etc.
  • Swap out the toppings if you need. Add some ham or sausage, mushrooms, or other veggies you have on hand.
  • Optional Toppings: 1 Tablespoon shredded cheddar cheese, handful spinach, sliced tomato. Or other vegetables, protein (ham, sausage, bacon, etc) and cheese.
