Broccoli Greek Yogurt Salad for One

Delicious broccoli Greek yogurt salad for one is ready in just 15 minutes. It's packed with broccoli, almonds, red grapes, bacon, and a creamy Greek yogurt dressing with or without mayo. Make it to go with summer chicken burgers or add chicken directly to it!

Ingredients

  • 1 slice bacon
  • 1 tablespoon plain Greek yogurt or ½ Tablespoon of yogurt and ½ Tablespoon mayonnaise
  • 1 teaspoon red wine vinegar
  • ½ teaspoon sugar
  • ¼ teaspoon salt
  • 1 cup broccoli
  • ½ cup red grapes
  • 1 tablespoon minced red onion
  • ½ tablespoon almonds roughly chopped or sliced

Instructions

  • Heat frypan over medium heat. Once hot, add slice of bacon, cook until both sides are to desired crispiness. About 5-7 minutes.
  • While bacon is cooking, make dressing in mixing bowl. Add 1 Tablespoon plain Greek yogurt (or ½ Tablespoon yogurt, ½ Tablespoon mayonnaise), 1 teaspoon red wine vinegar, ½ teaspoon sugar, and ¼ teaspoon salt. Whisk together. Set aside
  • Chop broccoli, slice grapes, and mince onion if not pre chopped. Measure out 1 cup of chopped broccoli, ½ cup grapes (sliced in half), and 1 Tablespoon minced onion. Save remaining ingredients for another recipe.
  • Place bacon on cutting board, blot out excess grease with a paper towel if desired, chop into bite sized pieces.
  • Add vegetables and bacon to mixing bowl, and mix together with tongs until dressing coats all vegetables. Add ½ Tablespoon chopped almonds prior to serving.

Notes

  • When turning bacon, grab far edge with tongs, and turn away from you. Cover with a mesh fryer screen. Carefully pour grease into a (not plastic!) bowl, set aside to cook eggs, proteins, veggies (beet greens anyone?) later.
  • While this salad is good with Greek yogurt, I prefer a combination of equal parts (½ Tablespoon each) yogurt and mayonnaise, it's more balanced.
  • Save time by mixing the dressing together in the bowl, then add all the salad ingredients except the almonds all together.
  • Chop the broccoli into small bite sized pieces to avoid a huge mouthful of broccoli
  • Cut bacon fat off before chopping bacon. No need to bite into 100% bacon fat without any of the delicious salty bacon (unless you love it, then keep it together)
