This easy single serving bacon wrapped chicken is the best way to enjoy fall and winter flavors without much effort at all. It just takes about 10 minutes hands on time, and you can let your oven do 90% of the work.
Preheat oven to 350 degrees. Line sheet pan with parchment paper or a baking liner. Place 2 slices of bacon on sheet pan. Bake for 10 minutes.
Remove sheet pan from oven, increase temperature to 400 degrees F.
Add 1 large chicken breast, ½ whole onion (chopped), and ½ lb sliced brussels sprouts to pan. Drizzle 2 teaspoons maple syrup over ingredients, season with a sprinkle of salt and pepper. Toss ingredients to evenly distribute syrup and bacon grease over all ingredients.
Return to oven (even if it's not done heating up to 400 degrees). Roast for 30 minutes or until brussels sprouts are crispy and browned.
Remove from oven, slice chicken and bacon on a cutting board and transfer to a plate to eat immediately.

Place bacon on top of chicken when cooking so chicken doesn't dry out.
Not a fan of brussels sprouts? Swap them out for broccoli, cauliflower, carrots, or other veggies.
Check temperature of the thickest part of the chicken breast with an instant read thermometer. Chicken is done once it reaches 165 degrees.
Make extra for lunch and dinners later in the week.
