Sheet Pan Maple Mustard Salmon for One

Cook this easy maple mustard salmon with brussles sprouts for one on a sheet pan, it takes just 20 minutes and is the perfect easy dinner for one or two. Use frozen salmon and swap the brussels for whatever vegetable you have around.

Ingredients

  • 5 ounces brussels sprouts shredded
  • 1 teaspoon dijon mustard divided
  • 1 tablespoon pure maple syrup divided
  • 1 tablespoon olive oil divided
  • one 4 ounce salmon filet
  • salt and pepper to taste
  • lemon wedge (optional)

Instructions

  • Preheat oven to 400 degrees. Dump 5 ounces shaved brussels sprouts onto a lined cookie sheet. Toss in 2 teaspoons of the maple syrup, 2 teaspoons dijon mustard, and 2 teaspoons olive oil. Move to sides of the cookie sheets.
  • Place 4 ounces salmon filets on cookie sheet, brush remaining 1 teaspoon syrup, 1 teaspoon mustard, and 1 teaspoon oil on top of fish. 
  • Place in oven, cook for 14-15 minutes. Remove when done, fish should be tender and flaky. Serve immediately with fresh bread or potatoes if desired.

Notes

  • You can use approximate amounts since not all salmon filets are 4 oz, and you may have more/less brussels sprouts.
  • You can also swap the brussels sprouts for other thinly sliced veggies.
  • Serve with crusty bread or potatoes.
  • Optional additions: chopped nuts, sunflower seeds after it's been baked, also a squeeze of lemon juice is a great addition as well.
