Single Serving Baked Oatmeal

Oatmeal is a great, easy breakfast, but some days even spending 10 minutes to make it up... well that just isn't going to happen. Instead of making fresh creamy oatmeal every morning, make a bigger batch of oatmeal cups so you can have single serving baked oatmeal in the morning without actually making it every morning.

  • Measuring Spoons
  • Muffin Tin
  • 6 Silicone or Paper Muffin Cups
  • Scoop or Measuring Cup

  • 1 cup old fashioned oats aka rolled oats
  • 1 whole egg
  • 1 medium ripe banana fresh or frozen
  • 1 tablespoon ground flaxseeds or chia seeds
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • 1 cup mixed berries frozen
  • cooking spray

  • Preheat oven to 350 degrees F. Add 1 c old fashioned oats, egg, medium ripe banana, 1 tablespoon ground flax, 1 teaspoon cinnamon, 1 teaspoon vanilla, ½ teaspoon baking powder, ½ teaspoon salt, and ¾ c milk to a medium mixing bowl. Mix with a rubber spatula until combined.
  • After oatmeal is mixed together, fold in 1 c frozen mixed berries.
  • Place 6 muffin cups in a muffin tin, then spray with cooking spray.
  • Using a scoop or measuring cup, spoon batter into each muffin cup, filling each cup to the top. Transfer to the oven to cook for 25-30 minutes, or until tops are browned and toothpick comes out clean.
  • Refrigerate for up to 5 days or freeze for longer. Heat cups in microwave and slather some peanut butter on each cup.

  • Double the recipe for 12 muffins
  • Use a 7th muffin cup if you have extra batter
  • You can use a fresh or frozen banana and berries
  • I used frozen mixed berries, use the type of berries you'd like. Just cut bigger berries into blueberry sized pieces.
