AVOCADO GRAPEFRUIT SALAD

This easy and flavor packed avocado grapefruit salad over winter greens is the perfect light salad for a quick side salad or dinner.

Spinach/kale mix Grapefruit Avocado Pistachios Hemp hearts Olive oil White balsamic vinegar Orange juice Salt, pepper

INGREDIENTS

Slice and peel grapefruit. Slice avocado in half, then remove pit.

STEP 1

Place avocado and grapefruit sections on top of greens.

STEP 2

Add hemp hearts and chopped pistachios to salad.

STEP 3

Make dressing by adding orange juice,  olive oil, white balsamic vinegar, and a pinch of salt to the salad. Then pour over veggies.

STEP 4

To make it a full meal, add edamame, tofu, pork, ham, or salmon to salad and serve with crusty bread.
