VEGETARIAN SQUASH SOUP

Make this easy 30 minute delicata squash soup. It's vegetarian, hearty, and bursting with flavor. Serve with a grilled cheese for a delicious cool weather dinner for one.

Delicata squash White beans Kale Carrot Celery Onion Olive oil/butter Garlic Italian seasoning Vegetable/chicken bouillon Water Lemon juice/apple cider vinegar

INGREDIENTS

Slice in half, remove seeds, then chop delicata squash.

STEP 1

Add butter/olive oil to pan over medium heat. Add chopped squash, carrot, onion, celery, salt, Italian seasoning. Cook until softened.

STEP 2

Add garlic, white beans, bouillon, and water to pan. Cover with a lid, simmer 15 minutes. Add chopped kale and lemon juice, stir together. Cook until kale is bright green.

STEP 3

Top with parmesan cheese and serve with a grilled cheese or another main dish.
