20 minute dinner

INGREDIENTS

olive oil                  lemon egg                           parmesan breadcrumbs       green beans Italian seasoning pork chop yukon gold potatoes

STEP 1

Heat cast iron skillet over medium heat.

STEP 2

Crack 1 egg into a shallow bowl, whisk with a fork. Pour 2 T breadcrumbs and 1 teaspoon Italian seasoning into another shallow bowl. Dip pork chop into egg.

STEP 3

Repeat with bread crumbs. Leave remaining breadcrumbs in the shallow dish. Once skillet is hot, place pork chop on skillet, cook 6 minutes. Add 1 med Yukon gold potato, cubed to skillet. Stir potatoes occasionally.

STEP 4

Cook 6 minutes on other side. Add green beans, remaining bread crumbs.

STEP 5

Add vegetables, pork to plate. Top with a squeeze of lemon, parmesan, salt, and pepper. Let pork rest 5 minutes before eating.
