Single Serve Brownie

Make this single serve brownie when you've got a chocolate craving. It's got gooey chocolate chips, can be cooked to your preference, and just takes about 20 minutes from start to finish. You're just a few minutes to getting your chocolate fix.

  • rubber spatula
  • 1 small ramekin 4-7 ounces (base circumference: about 3-4 inches)

Ingredients

  • cooking spray/butter to grease ramekin
  • 2 ½ tablespoons granulated sugar
  • 1 Tablespoon butter melted
  • 1 egg yolk
  • teaspoon vanilla extract
  • 2 Tablespoons all purpose flour or whole wheat
  • 1 Tablespoon unsweetened cocoa powder
  • teaspoon baking powder
  • teaspoon instant coffee granules
  • pinch kosher salt
  • 1 Tablespoon semi-sweet chocolate chips

Instructions

  • Grease or spray ramekin. Preheat oven to 350 degrees F.
  • To start making your single serving brownie, add to a small/medium mixing bowl: 1 Tablespoon melted butter (or melt butter in bowl), 2 ½ Tablespoons granulated sugar. Mix together with rubber spatula until smooth.
  • Next, add egg yolk, ⅛ teaspoon vanilla extract. Mix until smooth.
  • Add 2 Tablespoons flour, 1 Tablespoon unsweetened cocoa powder, ⅛ teaspoon baking powder, and ⅛ teaspoon instant coffee granules, and a pinch of kosher salt. Stir until just combined.
  • Fold in approximately 1 Tablespoon chocolate chips.
  • Pour into greased ramkein. Smooth top so it's even. Bake for 10-15 minutes, or until top is shiny and to preferred doneness.

Notes

  • Use whatever size oven safe ramekin that you have. Just know that if the ramekin is wider than 4-7 inches, your brownies will be thin and crunchy. They might also cook more quickly. If it's smaller than 4-7 inches, you'll have thicker brownies, that can be gooey and may take longer to bake than 10-15 minutes. 
  • You can substitute part of your white granulated sugar for brown sugar, but white sugar is great in this recipe. 
  • Doubling this single serving brownie recipe? Use a whole egg.
  • Substitute the all purpose flour for whole wheat flour, if desired. 
  • Optional toppings: chopped nuts, peanut butter or other nut butter.
