Sheet pan broccoli just takes 6-12 minutes to roast, is a low mess way to add a vegetable to dinner for one. Add to a main dish you're already roasting. You can roast it in a cooler or hotter oven easily! I'll show you how to adjust it to work.
Preheat oven to 425 degrees. Chop broccoli, to make 1 ½-2 cups. You can use broccoli florets and stalks.
Transfer to small baking sheet, lined with a baking mat or parchment paper. Toss with 2 teaspoons neutral oil, ¼ teaspoon of kosher salt, and ⅛ teaspoon ground pepper.
Roast in oven for 6-12 minutes, depending on how crispy/charred you want your broccoli. Toss once during cooking time (about half way through cooking time).
Top with additional seasonings, if desired. Enjoy with dinner, while hot.
Notes
Make a couple extra servings for easy vegetable side dishes during the week. Season when using.
Cook it at the temperature you're cooking your other food to save time and energy. Just check broccoli about 6-10 minutes into cooking to ensure it doesn't burn. Cook longer at lower temperatures and shorter at higher temperatures.
Use vegetable oil, grapeseed oil, and avocado oil. Olive oil often has a lower smoke point than these, so it might burn. I recommend the other options just to be safe.
Other great add-ins: red pepper flakes, fresh lemon juice, freshly ground black pepper, grated parmesan cheese, etc
