Trader Joes Sweet Potato Gnocchi and Sausage for One
Buy a bag of Trader Joe's sweet potato gnocchi and make an easy one pan dinner for one in about 10 minutes. Add sausage and vegetables for a full meal. I'll also share other Trader Joe's products to eat leftovers with.
Add ½ bag Trader Joe's sweet potato gnocchi, 1 link of sausage, 1 cup frozen vegetables to saucepan. Add 2 Tablespoons water. Cover, cook over medium heat for about 3 minutes. (follow directions on gnocchi package)
Remove lid, turn down heat to low. Stir and cook another 3-4 minutes, until sauce has thickened slightly and ingredients are warmed through.
Notes
This recipe doesn't have to be followed exactly, add as much sausage and vegetables as you'd like. Just don't add more than about a cup of vegetables to ½ bag of gnocchi as it would thin out the sauce too much. If adding more, cook it separately.
I found the sage flavor to be low, you can add some fresh or dried sage to the cooking gnocchi for more sage flavor.
Substitute Trader Joe's sweet potato gnocchi with regular gnocchi or sweet potato chunks. Find a tasty recipe for a sage butter sauce and toss it in that.
If cooking with sausage, use a savory flavored one, like garlic herb or Italian. It will balance out the sweet gnocchi better than a sweet sausage, like apple.
Add whatever vegetables you'd like, if any. Use fresh or frozen. You can add canned too, just drain them. Just add about 1 cup per ½ bag so the sauce doesn't get too thin.
I found it better to enjoy the gnocchi soft, instead of trying to brown them. The sauce started to burn as I cooked them longer to brown.
Topping Add-ins: chopped cashews or almonds, fresh or dried sage or thyme, parsley, lemon juice, parmesan cheese, etc.
