Homemade waffles for one are easy to make in 30 minutes (including resting time!) and delicious to eat. This simple recipe uses pantry ingredients and a buttermilk substitute, if you don't have any. This recipe makes 1 ½-2 large waffles.
½ cupbuttermilkor ½ cup milk/cream + 2 teaspoons white vinegar
1wholeegg
2Tablespoonsmelted butter
½-3/4teaspoonvanilla extract
½cupall purpose flour
½-1Tablespoongranulated sugar
½teaspoonbaking powder
½teaspoonbaking soda
¼teaspoonkosher salt
Instructions
Whisk together ½ cup buttermilk (or ½ cup milk/cream + 2 teaspoons white vinegar), 1 egg, 2 Tablespoons melted butter, and ½+ teaspoon vanilla extract.Butter will likely harden into small chunks, this is ok.
Add ½ cup all purpose flour, ½+ Tablespoon granulated sugar, ½ teaspoon baking powder, ½ teaspoon baking soda, and ¼ teaspoon kosher salt to wet ingredients. Whisk together until just combined. Will be lumpy. This is ok.
Let sit on counter for 15-30 minutes for best texture and taste.
Preheat waffle maker.
Add ¼-1/2+ of waffle batter to waffle maker, or to fill it up. Cook to desired crispiness. Enjoy immediately, with syrup, toppings and sides. If desired.

This recipe is best when the batter can sit out for about 15-30 minutes. it allows the flour to hydrate, making your waffles light and fluffy.
This recipe is essentially the same as Pancakes for One, but with double the butter and a whole egg.
