Homemade waffles for one are easy to make in 30 minutes (including resting time!) and delicious to eat. This simple recipe uses pantry ingredients and a buttermilk substitute, if you don't have any. This recipe makes 1 ½-2 large waffles.

A good waffle recipe, is well a good waffle recipe. Perfect for slow mornings and weekends. It's really similar to a good Pancake recipe, but with some extra butter and a whole egg (instead of a yolk) for one serving.
The extra butter helps it get really crispy on the outside, and egg white adds fluffiness, which you definitely want in good waffles.
This recipe may make 1 serving of waffles for you, or a bit extra. It depends on how hungry you are, and the size of your waffle iron.
This single serving waffle recipe is very easy and can be made in one bowl, by adding wet ingredients before dry ingredients. Let it sit for 15-30 minutes if you can, it'll help give you extra fluffy, flavorful waffles.
One note on buttermilk, it's ideal in this recipe, thick creamy, tart buttermilk makes the best waffles. But I don't keep buttermilk on hand always, you might not either. I share a trick to add white vinegar to milk (or even better-cream) to get a tangier flavor.

- Buttermilk: Thick buttermilk helps thicken the batter (which is good) and adds a nice tangy flavor. Substitute it for milk/cream + white vinegar. See recipe for instructions.
- Egg: You'll use a whole egg in this recipe.
- Butter: I like butter instead of oil for the flavor.
- Vanilla: A dash of vanilla extract makes your waffles for one sweeter and adds lovely flavor
- Flour: All purpose flour is great in this recipe, you could probably also substitute ½ the flour for whole wheat flour.
- Sugar: Regular granulated sugar is best in this recipe
- Baking Powder and Baking Soda: Both give you lots of fluffiness, plus baking soda adds to that traditional pancake and waffle flavor.
- Salt: a bit of kosher salt enhances the rest of the flavors in your waffle.

1.Whisk together wet ingredients: buttermilk (or milk/cream + vinegar), butter, egg, vanilla. It is ok if butter is in little chunks. It will probably harden a bit because of the cold dairy.
2. Add flour, sugar, baking powder, baking soda, and salt. Carefully whisk together until flour is moistened. It's ok if the batter is lumpy.
3. Let sit for 15-30 minutes for the fluffiest, most flavorful waffles.
4. Cook in waffle maker to desired crispiness.
5. Top with maple syrup, butter, additional toppings, if desired. Serve your waffles for one with sides like eggs, if desired.
Storage/Reheating Tips
Store leftovers in an airtight container or bag in the fridge for about a week, or in the freezer for a few months. To reheat, microwave or reheat in toaster/toaster oven for crispy edges.
Substitutions/Tips
- This waffles for one recipe is best when the batter can sit out for about 15-30 minutes. it allows the flour to hydrate, making your them light and fluffy.
- Cook in whatever kind of maker you have: Belgian waffle maker, square, round, etc. You'll get closer to 1 waffle with a Belgian maker vs thinner one.
- This recipe is essentially the same as Pancakes for One, but with double the butter and a whole egg.
- This batter likely makes more than one waffle. It's hard to cut the recipe down smaller, plus all waffle makers are different and different sizes.
- Make a larger batch of waffles and have a Waffle Bar for a party or shower.
- Other great add-ins: Add fruit, chocolate chips, chopped nuts, etc directly to your batter to cook.
- Sides: eggs, bacon, sausage, crumbled tofu, fruit, etc.
- Toppings: syrup, whipped cream, butter, berries, banana slices, chocolate chips, peanut butter, chopped nuts, etc.
FAQ
Waffle batter isn't quite the same as pancake batter. It usually has more oil/butter, sometimes more sugar, and sometimes more egg whites than pancake batter.
One waffle is often a serving, but some waffle makers make thick waffles and others make thinner waffles. Instead of eating one serving, pay attention to how hungry/full you are when eating and use that to decide how much to eat.

- ½ cup buttermilk or ½ cup milk/cream + 2 teaspoons white vinegar
- 1 whole egg
- 2 Tablespoons melted butter
- ½-3/4 teaspoon vanilla extract
- ½ cup all purpose flour
- ½-1 Tablespoon granulated sugar
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon kosher salt
Instructions
- Whisk together ½ cup buttermilk (or ½ cup milk/cream + 2 teaspoons white vinegar), 1 egg, 2 Tablespoons melted butter, and ½+ teaspoon vanilla extract.Butter will likely harden into small chunks, this is ok.
- Add ½ cup all purpose flour, ½+ Tablespoon granulated sugar, ½ teaspoon baking powder, ½ teaspoon baking soda, and ¼ teaspoon kosher salt to wet ingredients. Whisk together until just combined. Will be lumpy. This is ok.
- Let sit on counter for 15-30 minutes for best texture and taste.
- Preheat waffle maker.
- Add ¼-1/2+ of waffle batter to waffle maker, or to fill it up. Cook to desired crispiness. Enjoy immediately, with syrup, toppings and sides. If desired.
