I originally created this simple cheddar and apple omelet after having a similar omelet in New York City. I never would have thought of adding apples to eggs, but seriously, it's so good.
I added some fresh kale to this omelet, since I had some that needed to be used up. Add it or not, either way! This combination is great with eggs.
You just need to chop 2 ingredients (kale & apple) to get this super unique and delicious omelet. Make it for breakfast, brunch, or an easy one pan dinner. It's so quick and easy.

- Eggs
- Milk
- Crisp apple: Chopped apple adds crunch and flavor to this apple omelet with cheddar cheese. I recommend a sweet/tart apple that's also crisp. Honeycrisp, pink lady, even granny smith would be good in this omelet.
- Kale: Kale or spinach is an easy vegetable addition. Onions would be great too. No need to add any of these vegetable options, but they are tasty additions.
- Sharp cheddar cheese: Shredded shsrp cheddar cheese is best in this omelet, in my mind. But use regular cheddar if you have it. Mozzarella is very mild and doesn't add much flavor. I would stick to a cheddar cheese.

Prepare the produce by removing kale leaves from 2 stalks. Next, massage leaves by rubbing them between your hands to soften them.
Rip up or chop kale into bite sized pieces. Chop ½ apple into bite sized pieces. Set aside.
Add milk and salt/pepper to eggs, whisk together until mixture is smooth.
Spray hot pan with cooking spray, then pour egg mixture into pan. Once eggs have began to cook, cover egg mixture evenly with kale, apple, and cheese. Cook until eggs are cooked through and cheese is melted.
Slide a rubber spatula under egg mixture to make sure it doesn't stick to the sides of the pan.
Fold egg mixture over. It's ok if it breaks, it's packed with toppings! Serve your apple omelet with cheddar cheese immediately.
Storage/Reheating Tips
Store any leftover apple omelet in an airtight container in the fridge for about a week. Microwave, covered to reheat.
Substitutions/Tips
- Use a really crisp apple like honeycrisp, braeburn, or a crisp fuji apple.
- Don't feel bad if you break your cheddar and apple omelet when folding it. It's easy when you've got lots of goodies inside it.
- Want to take it up a level? Sautee the kale and apples in some butter before cooking the eggs.
- Other good add-ins: chopped nuts, thinly sliced onion, green onion, and spinach are great in an apple omelet.
FAQ
The sharp cheddar cheese is great in this apple omelet because it's sharpness pairs nicely with the buttery eggs, but if you don't have sharp cheddar on hand medium cheddar would be a good alternative. Goat cheese or feta would work too.
Yes, they are great together, creamy, slightly sweet eggs and crunchy slightly tart apple taste great together. Enjoy them in an apple omelet, like this recipe.
Cook it in a small, non stick frying pan over low heat. Lift up edges to let uncooked eggs pour out and cook on the bottom. Flip half the eggs over to create a folded omelet.

- 2 eggs beaten
- 1 tablespoon milk
- salt and pepper to taste

Would like to try your recipe but need nutrition information. Many older people live alone are on particular diet restrictions such as sodium and potassium and protein and phosphorus. And yes calories too. Single person recipes would be wonderful help.
