    Jump into New England fall with this delicious 15 minute apple omelette with sharp cheddar cheese for a protein punch. You may not think apples go in omelettes but, when combined with kale and sharp cheddar cheese, they're really delicious, and super fall-flavored!

    How will this apple omelette make your life easier?

    You just need to chop 2 ingredients (kale & apple) to get this super unique and delicious omelette. Make it for breakfast, brunch, or an easy one pan dinner. This microwave egg bowl, egg & sausage casserole, & South African Shakshuka are all other great egg dishes for breakfast or dinner.

    How do I make this apple omelette?

    Prepare the produce by removing kale leaves from 2 stalks. Next, massage leaves by rubbing them between your hands to soften them.

    Expert Tip: add a pinch of salt to the kale before you massage it with your hands, this will help soften the kale even more.

    Rip up or chop kale into bite sized pieces. Chop ½ apple into bite sized pieces. Set aside.

    Expert Tip: Use a really crisp apple like honeycrisp, braeburn, or a crisp fuji apple.

    Add 1 tablespoon milk and salt/pepper to eggs, whisk together until mixture is smooth.

    Spray hot pan with cooking spray, then pour egg mixture into pan. Once eggs have began to cook, cover egg mixture evenly with kale, apple, and cheese. Cook until eggs are cooked through and cheese is melted.

    Slide a rubber spatula under egg mixture to make sure it doesn't stick to the sides of the pan.

    Fold egg mixture over. Serve immediately.

    Expert Tip: Don't feel bad if you break your omelette when folding it. It's easy when you've got lots of goodies inside it, and it will taste the same!

    FAQ

    What's the difference between an omelet & an omelette?

    There's no difference in the actual omelette, omelette is the modern French spelling, and omelet is the American English spelling. Sometimes I feel fancy & want to spell it the French way. It probably won't last long.

    I don't have sharp cheddar cheese, can I use another type of cheese?

    The sharp cheddar cheese is great in this dish because it's sharpness pairs nicely with the buttery eggs, but if you don't have sharp cheddar on hand medium cheddar would be a good alternative. Also, there are a few recipes online with goat cheese instead, that sounds delicious too!

    Ingredients

    • 2 eggs beaten
    • 1 tablespoon milk
    • salt and pepper to taste
    • cooking spray
    • ½ whole crisp apple like a honeycrisp apple
    • 2 stalks kale
    • 2 tablespoon sharp cheddar cheese shredded

    Instructions

    • Heat up frying pan.
    • Remove kale leaves from 2 stalks, massage leaves by rubbing between hands to soften them. Rip up or chop into bite sized pieces. Chop ½ apple into bite sized pieces. Set aside.
    • Add 1 tablespoon milk and salt/pepper to eggs, whisk together until mixture is smooth.
    • Spray hot pan with cooking spray, then pour egg mixture into pan. Once eggs have began to cook, cover egg mixture evenly with kale, apple, and cheese. Cook until eggs are cooked through and cheese is melted.
    • Fold egg mixture over. Serve immediately

        Hi Judy, I don't include calories on my recipes because our calorie needs change so much and I don't recommend tracking calories except in just a few specific occasions.
