Raid your pantry to make this delicious and super easy peanut butter banana oatmeal. It's quick and packed with fiber to power your work day.

How Peanut Butter Banana Oatmeal fits into my lifestyle

Can we start with a bit of real talk? I like oatmeal, it's a great vehicle for so many delicious flavors, and is packed with fiber. But, every time I eat oatmeal, I find myself hungry an hour or so later. It's so frustrating.

I decided to play around with flavors & realized that I can add peanut butter or nuts to my oatmeal and that alone bulks my oatmeal up enough to keep me full for the whole morning.

The added fiber and fat from these nuts was just what I needed.

Peanut butter and banana is one of my absolute favorite flavor combinations. It's sweet, salty, and just so delicious.

How it can fit into your life

Oatmeal is a favorite breakfast, because it's so easy, versatile, and stores well. But, it can be suuuuuper boring.

Nobody wants boring breakfasts.... so open up your cupboards & grab these staples to make your delicious and easy breakfast. You can even make it ahead of time & eat for the week.

Make sure to put the oatmeal in a giant bowl to microwave, it likes to grow and overflow. I've made this mistake far too many times.

    Ingredients

    • ¾ cup rolled oats
    • 1 ½ cup water
    • pinch of salt
    • 1 tablespoon peanut butter
    • ½ banana sliced
    • sprinkle of cinnamon ~I add ¼ teaspoon

    Instructions

    • Combine rolled oats, water, and pinch of salt in a large microwave safe bowl. Microwave on high for 2.5-3 minutes.
    • Stir oatmeal, then add peanut butter, banana, and cinnamon

    Notes

-You can make this on the stovetop
-I love making oatmeal packets to bring to eat at work, instead of using regular peanut butter, I use a teaspoon of peanut butter powder, and dried fruit. I add all these ingredients to a bag, and pour it into boiling water. Let stand for 5 minutes until thickened.
-This flavored oatmeal is delicious day of, and also days after. You can increase the portion size, cook the oatmeal, and then refrigerate individual servings for quick breakfasts during the week. Just heat the oatmeal up as needed, and enjoy.

What are your favorite breakfasts? I usually go for some sort of oatmeal because it's so easy, portable, and can be so delicious.
