I made chicken wings for Sprouts and was just dying to have a bright, flavor packed coleslaw to accompany it. It's bright, bursting with flavor, and really easy. This coleslaw is great with Chicken Burgers or Instant Pot Pulled Pork.

It's made with simple ingredients, only takes 5 minutes to make, and is bursting with flavor.
Coleslaws are a great way to use up extra cabbage & are a fun way to bring veggies to an event. You can also make this red wine vinegar coleslaw if you're looking for a different flavor profile.

- Neutral oil
- Sesame oil

How do I make slaw?
Start by adding ½ chopped whole bell pepper and 1 sliced green onion to a mixing bowl.
Expert Tip: Use any color of bell pepper. Red, orange, and yellow will be sweeter, and green will be less expensive.
Pour 1.5 T soy sauce, 1 T lemon juice, 1 T canola oil, and ½ T sesame oil into the veggie mixture.
Expert Tip: Mix dressing in separate bowl if you won't eat the whole salad at once. You can also easily double the dressing to keep leftovers for other recipes listed below.
Mix together well. Acid in this dressing will soften the pepper and onion slightly.
Dump ½ bag of coleslaw mix into a mixing bowl (or about 2 cups shredded cabbage & other veggies). Mix together well. Serve and enjoy.

Vegan Coleslaw Dressing with Soy Sauce
Equipment

- cutting board
- medium mixing bowl
- tablespoon measuring spoon

Ingredients
- ½ whole red pepper sliced
- 1 whole green onion sliced thinly
- 1.5 tablespoons soy sauce
- 1 tablespoon lemon juice
- 1 tablespoon canola or grapeseed oil
- ½ tablespoon sesame oil
- ½ pound bag shredded coleslaw
Instructions
- Add all ingredients of dressing to a small mason jar (with a lid): soy sauce, lemon juice, oil & sesame oil. Put lid on jar and shake. Set aside
- Mix together coleslaw and red peppers. Add salad dressing just prior to serving. Save remaining dressing to use on other vegetables or as a marinade.
- Chop up ½ whole red bell pepper and 1 green onion. Place in medium mixing bowl.
- Pour in 1.5 T soy sauce, 1 T lemon juice, 1 T canola oil, and ½ T sesame oil over chopped vegetables. Mix together.
- Add ½ bag coleslaw (or 2 cups shredded cabbage) to dressed vegetables, mix together. Serve immediately.
