    These healthy huevos rancheros are the perfect reason to get you out of bed on a lazy morning. They can be thrown together with a few pantry items in just 10 minutes. Can mornings be any better?

    How will they make your life easier?

    These healthy huevos rancheros are my favorite quick breakfast (or quick dinner) to make when I have extra tortillas and beans on hand. All you have to do is fry an egg and assemble it!

    Here are a couple other super easy breakfast dishes: Microwave Egg Bowl, Easy Yogurt Bowl, and this Triple Berry Chia Pudding.

    How do I make this recipe?

    Make your healthy huevos rancheros by placing a large saucepan over medium heat, brown your tortilla on each side until they get crispy, about 2-3 minutes. Remove from heat.

    Return your small saucepan to burner. Once hot, add ½ teaspoon mild oil to small saucepan. Crack an egg into sauce pan, cook until yolk reaches desired doneness. Sprinkle salt and pepper once it's done.

    While egg is cooking, spread about 1-2 tablespoon beans on tortilla. Place cooked egg on top of beans, then add 1-2 tablespoon salsa. Enjoy your healthy huevos rancheros immediately.

    Optional Toppings: Shredded cheddar cheese, avocado, cilantro, tomatoes.

    Expert Tips

    • Use corn or flour tortillas. Cut tortillas if they're too big.  
    • For a runny yolk, cook 3-4 minutes, or until white is fully cooked and yolk is wiggly.
    • Use refried beans or smashed black beans on your healthy huevos rancheros.
    • Optional Healthy Huevos Rancheros Toppings: Shredded cheddar cheese, avocado, cilantro, tomatoes.

    Top your healthy huevos rancheros with shredded cheddar cheese, avocado, cilantro, tomatoes, or other sauce. You can serve them with rice or more beans.

    What does ranchero style mean?

    Ranchero style is a piquant style tomato sauce with onions, green chilis, and seasonings according to Wikipedia. Doesn't that sound so good?

    Easy Huevos Rancheros

    These healthy huevos rancheros are the perfect reason to get you out of bed on a lazy morning. They can be thrown together with a few pantry items in just 10 minutes.

    • Small fry pan

    Ingredients

    • 1 small corn or flour tortilla
    • ¼ cup refried beans
    • 1-2 tablespoons salsa
    • egg
    • cooking spray
    • salt and pepper to taste

    Instructions

    • Turn stove on to medium heat, place large saucepan on heated element, brown tortilla on each side until they get crispy, about 2-3 minutes. Remove from heat.
    • Heat small saucepan over medium-high heat. Once hot, add ½ teaspoon mild oil to small saucepan. Crack an egg into sauce pan, cook until yolk reaches desired doneness. Sprinkle salt and pepper once done.
    • While egg is cooking, spread about ¼ c beans on tortilla. Place cooked egg on top of beans, then add 1-2 tablespoon salsa. Enjoy immediately.

      I've actually never had this kind of dish before because I can't have tortillas or beans - however, there are some new tortillas that are grainless that I can eat, I think... or I can make one out of egg - Egg topping egg! haha! Perfect!
