And if you have ready to use queso, it'll just take 5 minutes to throw together and you'll be on your way to having a delish dinner.
This dish is great because it's super versatile. Use the veggies you have on hand, the protein (canned beans or leftover meat), and pre-made or homemade queso to add tons of creamy cheesy flavor)

Mix ½ teaspoon cumin, ½ teaspoon oregano, ¼ teaspoon salt, and ½ c black beans in a small bowl. Add 1 c cooked rice, ½ c bean mixture, ½ c sliced veggies, ¼ c queso, and ¼ c salsa to bowl. Serve with lime wedge and tortilla chips if desired.
