    This vegetarian burrito bowl with queso is the perfect super quick dinner recipe. You can throw it together in about 5 minutes, using ingredients you already have in your pantry, it's packed with flavor and doesn't taste like you just threw it together.

    How will this vegetarian burrito bowl make your life easier?

    How many times do you get home from a long day to find nothing ready to eat at home? You probably have all the ingredients you need to make this easy vegetarian burrito bowl with queso in just 10-15 minutes. And if you have ready to use queso, it'll just take 5 minutes to throw together and you'll be on your way to having a delish dinner.

    This dish is great because it's super versatile. Use the veggies you have on hand, the protein (canned beans or leftover meat), and pre-made or homemade queso to add tons of creamy cheesy flavor)

    If you're not in the mood for a veggie burrito bowl, here are a couple of my favorite quick dinner recipes: grapefruit & avocado salad, black bean tacos, quick microwave egg bowl, or these huevos rancheros.

    • Black beans
    • Oregano
    • Cumin
    • Cooked brown rice
    • Peppers and onions
    • Premade queso (from the store or homemade)
    • Salsa
    • Lime

    How do I make a veggie burrito bowl?

    Mix ½ teaspoon cumin, ½ teaspoon oregano, ¼ teaspoon salt, and ½ c black beans in a small bowl. Add 1 c cooked rice, ½ c bean mixture, ½ c sliced veggies, ¼ c queso, and ¼ c salsa to bowl. Serve with lime wedge and tortilla chips if desired. 

    Expert Tip: Use whatever beans and veggies you have on hand (pinto beans, zucchini, cooked sweet potatoes, avocado, tomatoes, etc). You can also use minute rice or frozen rice.

    How do you eat a burrito bowl?

    Mix all the ingredients together so you can get all the delicious flavors in one bite. Then grab a fork and eat it. It's super easy, just works well when you mix it all together and eat with a fork.

    Should I get a burrito or a bowl?

    They're essentially the same, including this recipe. A burrito has all these ingredients in a large flour tortilla. If you need something you can eat with your hands-go with a burrito, if you need something you can eat with a fork, go with a bowl!

    • Add pulled pork or another kind of meat that you have on hand.
    • Serve as tacos
    • Make into a taco salad
    • Fill burrito sized tortilla with all the ingredients.

    • (black beans) black bean tacos, huevos rancheros, black bean taco pasta
    • (queso) dip chips into it, add to tacos, or a burrito.
    • (lime) pomegranate lime spritzer, coconut green lentil curry.
    • (rice) stuffed squash with ground beef & rice, beef & broccoli, chicken & broccoli casserole, easy beef bulgogi, or this warm harvest bowl.
    • (veggies) oh the options are endless. veggie quesadilla, microwave egg bowl, or these freezer breakfast sandwiches.
