    Make dinner tonight a snap with this super easy 30 minute Chicken Broccoli Divan casserole for one + leftovers. Juicy chicken, tender broccoli, and a creamy sauce top brown rice.

    How will this chicken broccoli divan make your life easier?

    This casserole just takes about 10 minutes to prep, and 20 to bake. It's easy and requires no fussing while it's cooking. This recipe makes 2 servings, which is great for dinner + lunch leftovers. You can easily double or triple the recipe to serve a crowd, have extra leftovers, or freeze individual servings for later. Whatever works for you!

    Also, since it doesn't take any attention while cooking you can prep food for the rest of the week. Cook extra rice, throw another chicken breast into the oven to cook for other recipes, and maybe chop the rest of the broccoli to use. This is the perfect time to get some batch cooking out of the way.

    Here are a couple other favorite & super easy baked weeknight meals: Roasted Winter Vegetables (+ a sausage or 2 for a full meal), Chicken Bacon Sheet Pan Dinner, Shrimp Sheet Pan Dinner, Sheet Pan Maple Mustard Salmon, and this Cajun Shrimp Tin Foil Dinner. You can also make these easy one pot meals like Pork Chops with Apples and Veggies, Pan Seared Pork Chops with Potatoes, Grilled Lamb Steak with Asparagus, or my favorite Turkey Pumpkin Chili.

    What makes this divan so good?

    • Cream of chicken soup 
    • Plain yogurt
    • Curry powder
    • Chicken breasts 
    • Broccoli
    • Cheddar cheese

    How do I make chicken broccoli divan?

    Preheat oven to 400 degrees. Prepare rice according to package directions.

    Make Sauce by mixing ⅓ can cream of chicken soup and ⅓ c plain yogurt in medium bowl; add ⅓ teaspoon curry powder, ¼ teaspoon salt and ¼ teaspoon pepper.

    Expert Tip: DIY Cream of Chicken soup by adding 2 teaspoon butter, ⅛ c chicken broth* and ⅛ c milk to a small pot over medium-low heat. Whisk in 1 T flour, Whisk until smooth. *I recommend using bouillon paste to make broth.

    Spray casserole dish with cooking spray, to coat

    Layer in 1 c cubed uncooked chicken and 1 c chopped broccoli.

    Expert Tip: Chop up broccoli florets and stalks, remove outer layers of stalks to reduce food waste.

    Pour soup/yogurt mixture over chicken and broccoli, top with ¼ c shredded cheddar cheese. Bake for 20 minutes.

    Expert Tip: If using precooked chicken, start by baking for 15 minutes, and remove when top is golden brown and bubbly.

    Serve with rice.

    What does chicken divan mean?

    Chicken divan is a casserole typically with broccoli and Mornay sauce (like a bechamel sauce) here's a recipe for a classic Mornay sauce.

    How do I reheat chicken divan?

    The best way is to cover it with foil and bake for 20-30 minutes at 350 degrees. But honestly, if you're just reheating a serving you can reheat it quickly in the microwave.

    • (chicken) Chicken Salad Pitas, Chicken Bacon Sheet Pan Dinner, Chicken Burgers, 15 Minute Chicken Stir Fry.
    • (broccoli) Broccoli Salad, add it to this Parchment Paper Salmon, Chicken & Broccoli, Shrimp Sheet Pan Dinner, add to Sheet Pan Winter Veggies or this 15 Minute Stir Fry Noodles.
    • (rice) Thai beef bowl with garlic & spinach, Easy stuffed squash with ground beef & rice, Easy Korean beef bulgogi.
