    Chicken Broccoli Divan (two servings)

    This easy chicken broccoli divan is ready to eat in about 30 minutes. It's full of tender chicken and broccoli with a creamy curry sauce. This simple recipe makes two servings, and is great as leftovers.

    This chicken broccoli divan just takes about 10 minutes to prep, and 20 to bake. It's easy and requires no fussing while it's cooking. This recipe makes 2 servings, which is great for dinner + lunch leftovers.

    It's based on a recipe my mom used to make when I was growing up, it's got the most delicious curry sauce. I really love this chicken and broccoli with a sauce that's made with both cream of chicken soup and plain Greek yogurt.

    Double or triple this chicken divan with Greek yogurt it for a crowd or to freeze for later. Batch cook your rice to have for later, if you'd like. Just like I recommend here.

    Ingredients

    Scroll down to the chicken broccoli divan recipe card for the amounts of each ingredient, but here's a quick description of what's in this recipe.

    • Cream of chicken soup: This soup is such a quintessential American comfort flavor. Use your favorite canned variety or make your own. Either works well.
    • Plain Greek yogurt: It makes this divan very creamy and adds a nice tangy flavor that pairs well with the cream of chicken soup.
    • Curry powder: Some yellow curry powder adds lots of easy flavor to this dish. It pairs deliciously with the cream of chicken soup and Greek yogurt.
    • Chicken breasts: Use raw chicken. You can use precooked chicken or leftover rotisserie chicken, or whatever you have. If using precooked chicken, just cook until sauce is warm and bubbling. It may take a bit less time to bake.
    • Broccoli: This recipe calls for fresh broccoli, I think thawed frozen broccoli would work too. Frozen broccoli may leave your chicken broccoli divan with Greek yogurt too drippy.
    • Cheddar cheese

    Preheat oven to 400 degrees. Prepare rice according to package directions.

    Make Sauce by mixing cream of chicken soup and plain yogurt in medium bowl; add curry powder, salt and pepper.

    Spray casserole dish with cooking spray, to coat.

    Layer in cubed uncooked chicken (about 1 inch chunks) and chopped broccoli.

    Pour soup/yogurt mixture over chicken and broccoli, top with a cup shredded cheddar cheese. Bake chicken broccoli divan for 20 minutes.

    Serve chicken broccoli divan with Greek yogurt over rice.

    Storage/Reheating Tips

    Store any leftover chicken broccoli divan in an airtight container in the fridge for about a week. To reheat, microwave, covered until warmed through. You can add a dash of water to the sauce, and mix it up after reheating for a creamier texture.

    The chicken broccoli with sauce is probably ok to freeze for later. Just freeze in an airtight container, and I'd recommend freezing in individual servings so you don't have to eat multiple servings at once. Freeze separately from rice or other sides.

    Substitutions/Tips

    • This is an easy recipe to double or triple for leftovers or a crowd. Just adjust ingredients slightly, if necessary.
    • DIY Cream of Chicken soup by adding 2 teaspoon butter, ⅛ c chicken broth* and ⅛ c milk to a small pot over medium-low heat. Whisk in 1 T flour, Whisk until smooth. *I recommend using bouillon paste to make broth. 
    • Chop up broccoli florets and stalks, remove outer layers of stalks to reduce food waste.
    • You can use frozen broccoli florets instead of fresh broccoli, but just thaw before mixing, or it'll be too watery.
    • If using precooked chicken, start by baking your chicken broccoli divan for 15 minutes, remove when top is golden brown and bubbly.
    • Other great add-ins: Other vegetables, breadcrumbs or crumbled ritz crackers on top of this chicken broccoli divan.

    FAQ

    Why is it called chicken divan?

    Chicken divan is a casserole typically with broccoli and Mornay sauce, here's a recipe for a classic Mornay sauce.

    Divan comes from the restaurant it was invented at: Divan Parisien Restaurant at Chatham Hotel in New York City.

    How do you reheat frozen chicken divan?

    It can be frozen or refrigerated for later. Reheat your chicken broccoli divan in the microwave or cover and bake for 20-30 minutes at 350 degrees.

    What to serve with broccoli chicken divan?

    Serve this chicken broccoli divan over rice for a satisfying meal. You don't need to serve it with anything else, unless you'd like. Serve with a simple salad with a vinaigrette or fruit.

    • Broccoli: Broccoli Salad, Air Fryer Broccoli and Cauliflower, Chicken & Broccoli, Shrimp Sheet Pan Dinner, add to Sheet Pan Winter Veggies
    • Rice: Thai beef bowl with garlic & spinach, Easy stuffed squash with ground beef & rice, Easy Korean beef bulgogi.

      I made this today. i did leave it in for longer .. because the chicken would have been under cooked.. next time i cook it i will cook the chicken before .

        thanks for sharing. Cooking time definitely depends on the chicken chunk size. I think I did 1 inch chunks probably. I'll update the recipe with that. Glad you cooked it longer.
