    Broccoli Greek Yogurt Salad for One

    Delicious broccoli Greek yogurt salad for one is ready in just 15 minutes. It's packed with broccoli, almonds, red grapes, bacon, and a creamy Greek yogurt dressing with or without mayo. Make it to go with summer chicken burgers or add chicken to it!

    This broccoli Greek yogurt salad utilizes just a few ingredients for a tangy take on a traditional broccoli salad. It's got so much flavor, crunch, and is super refreshing with the dressing and juicy grapes.

    It's got a slightly higher (thanks to the Greek yogurt) protein content, easy to chop (or buy) veggies to save you prep time, and BACON. I prefer this salad with an equal mix of Greek yogurt and mayo for a tangy, sweet dressing. Or just use one of the two.

    I like this salad with a simple chicken breast for a dinner for one. I always recommend focusing on a main or side (or one pot meal), and serve with any simple additions. This helps simplify cooking, save time, thought and effort. But of course, do what you want!

    You can also make a larger batch for a BBQ or leftovers. It does hold over pretty well for about 3-4 days. It's especially good the second day.

    Ingredients

    • Broccoli
    • Red Grapes: You could swap the grapes for green grapes, dried or fresh fruit, but red grapes add such a wonderful texture and flavor to this salad. They also have a more subtle flavor that doesn't compete with the dressing, bacon, or other toppings.
    • Greek Yogurt: My favorite way to make this dressing is with ½ yogurt, ½ mayonnaise for a sweet/tangy flavor. Use both or just one of the two.
    • Mayonnaise (see above)
    • Red Onion: Zingy, slightly sweet red onion adds a nice crunch and flavor to this simple side salad.
    • Almonds: Chopped almonds or other nuts are great in this salad for crunch and flavor. Pecans, walnuts, or pistachios would be great in this broccoli Greek yogurt salad.
    • Red Wine Vinegar: Some red wine vinegar adds lots of flavor to this simple dressing.
    • Sugar: You need a bit of sugar to balance out the tangy yogurt and vinegar, use less if you don't add yogurt, or less than ½ of it.
    • Bacon: Crispy, savory bacon pairs so well with the broccoli, tangy dressing and juicy grapes in this salad. It's not absolutely necessary, but the way my mom makes it, and is such a delicious addition.

    1. Cook bacon to preference, but I'd recommend cooking it until it's crisp at least.

    2. Make your dressing in the large serving bowl that you'll serve it in. Start by adding plain Greek yogurt (or yogurt/mayonnaise combination), red wine vinegar, salt and pepper, then whisk until smooth.

    3. Chop fresh broccoli, red onion, and grapes. When bacon is finished and slightly cooled, chop that too.

    4. Add all vegetables and bacon to mixing bowl, mix and then add in the chopped almonds. Save time here by using pre-sliced almonds.

    You can eat this broccoli Greek yogurt salad as a light dinner, bring it a potluck or BBQ as a side dish, or serve with grilled chicken. Pair with your favorite crusty bread if you'd like a grain with it.

    Make extra broccoli Greek yogurt salad if you'd like leftovers, store it in an airtight container in the fridge for a couple days.

    • Single Serving Mac and Cheese
    • Panko Tofu for One
    • As always, a simple sauteed or grilled protein is great with this broccoli Greek yogurt salad. There's no need to make two separate main and side dish recipes.

    Storage Tips

    This easy broccoli Greek yogurt salad stores well, especially for 1-3 days. Store in an airtight container in the fridge. Keep an eye on it after about 3 days. For best results, chop bacon small &/or add it prior to serving, it'll get soft, especially after 3 days.

    Substitutions/Tips

    • Save time by mixing the dressing for your salad in the bowl, then add all the salad ingredients except the almonds all together.
    • Chop the broccoli into small bite sized pieces to avoid a huge mouthful of broccoli in your broccoli Greek yogurt salad.
    • Cut bacon fat off before chopping bacon. No need to bite into 100% bacon fat without any of the delicious salty bacon (unless you love it, then keep it together)
    • Substitutions/Additions: Dried cranberries can be subbed for grapes (although the juicy fresh grapes add such a great texture to the salad), and sunflower seeds or other nuts can substitute the almonds in this broccoli Greek yogurt salad.

    FAQ

    Do I cook the broccoli?

    The broccoli isn't cooked in most broccoli salads. When it's raw it remains crunchy and delicious, just like in this broccoli Greek yogurt salad. Plus the broccoli doesn't taste bitter with all the other ingredients in it.

    If you're not a raw broccoli fan blanch it quickly by cooking it for 1-1.5 minutes in boiling water THEN immediately transfer to ice water to stop the cooking process.

    Why use half mayo half yogurt in the dressing?

    The yogurt adds a great tang to this salad. While just using Greek yogurt in the broccoli Greek yogurt salad would be healthier, it's too tangy for my taste, so I combine it with sweeter, creamy mayo.

    Should I dress the salad for leftovers?

    This broccoli Greek yogurt salad holds over well for about 3 days, after that it gets soft and the flavors change. It's particularly great (even better) after a day or so! it's an easy salad to make for leftovers or ahead of time.

    What to do with leftover ingredients

    When you're cooking for one, you often have leftover produce, cans of whatever ingredient, etc. Here are a couple ideas on how to use up the leftover ingredients. It'll help you save money by wasting fewer ingredients.

    • Bacon: Easy No Mayo Potato Salad, Maple Bacon Chicken & Brussels Sprouts, Chicken Bacon and Mushroom Pasta, or Chicken Bacon Ranch Sandwich.
    • Broccoli: Beef & Broccoli, Katie's Famous Chicken & Broccoli, Air Fryer Broccoli and Cauliflower, or Sheet Pan Broccoli for One.
    • Red Onion: Fish Tacos with White Sauce, or add to Microwave Egg Bowl.
    • Grapes: Eat them raw, they're so good-especially on a hot day, or in this Chicken Salad Pita

    Ingredients

    • 1 slice bacon
    • 1 tablespoon plain Greek yogurt or ½ Tablespoon of yogurt and ½ Tablespoon mayonnaise
    • 1 teaspoon red wine vinegar
    • ½ teaspoon sugar
    • ¼ teaspoon salt
    • 1 cup broccoli
    • ½ cup red grapes
    • 1 tablespoon minced red onion
    • ½ tablespoon almonds roughly chopped or sliced

    Instructions

    • Heat frypan over medium heat. Once hot, add slice of bacon, cook until both sides are to desired crispiness. About 5-7 minutes.
    • While bacon is cooking, make dressing in mixing bowl. Add 1 Tablespoon plain Greek yogurt (or ½ Tablespoon yogurt, ½ Tablespoon mayonnaise), 1 teaspoon red wine vinegar, ½ teaspoon sugar, and ¼ teaspoon salt. Whisk together. Set aside
    • Chop broccoli, slice grapes, and mince onion if not pre chopped. Measure out 1 cup of chopped broccoli, ½ cup grapes (sliced in half), and 1 Tablespoon minced onion. Save remaining ingredients for another recipe.
    • Place bacon on cutting board, blot out excess grease with a paper towel if desired, chop into bite sized pieces.
    • Add vegetables and bacon to mixing bowl, and mix together with tongs until dressing coats all vegetables. Add ½ Tablespoon chopped almonds prior to serving.

    Notes

    • When turning bacon, grab far edge with tongs, and turn away from you. Cover with a mesh fryer screen. Carefully pour grease into a (not plastic!) bowl, set aside to cook eggs, proteins, veggies (beet greens anyone?) later.
    • While this salad is good with Greek yogurt, I prefer a combination of equal parts (½ Tablespoon each) yogurt and mayonnaise, it's more balanced.
    • Save time by mixing the dressing together in the bowl, then add all the salad ingredients except the almonds all together.
    • Chop the broccoli into small bite sized pieces to avoid a huge mouthful of broccoli
    • Cut bacon fat off before chopping bacon. No need to bite into 100% bacon fat without any of the delicious salty bacon (unless you love it, then keep it together)
