    Grilled Turkey Brie Sandwich

    Bump up the flavor of this turkey brie sandwich with a homemade award winning wild blueberry mustard. While you can eat it year round, it's great for Thanksgiving leftovers. Serve with a delicious salad like this easy grapefruit and avocado salad.

    How will this brie sandwich make your life easier?

    This turkey brie sandwich is a great way to use up leftover turkey from Thanksgiving, or just make it for an easy weekday lunch. If you need Thanksgiving side dish ideas, make sure to check these recipes out.

    This blueberry mustard is so good, you'll definitely want to make extra. Dip french fries and veggies in it. And definitely have some for when you make chicken burgers.

    How do I make it?

    Start your turkey brie sandwich by making blueberry mustard: combine thawed wild blueberries, whole grain mustard, and chia seeds. Set aside to thicken.

    Make sandwiches by placing 2 slices brie, turkey on top of a slice of bread. Then place second slice of bread on top.

    Add butter or cooking spray to a small saucepan, and heat over medium heat. Grill sandwich in small saucepan until cheese is melted, about 3-4 minutes on each side.

    Remove your turkey brie sandwich from saucepan and place on serving plate. Remove top slice of bread, and set on the side. Spoon wild blueberry mustard on top of turkey and cheese, then add a handful of arugula to sandwich. Replace top slice of bread.

    Substitutions/Tips

    • Serve your turkey brie sandwich with chips and/or a green salad.
    • Use regular frozen blueberries if you can't find wild blueberries, but know that they won't be as flavorful or tart as the wild variety.
    • Remove blueberries from freezer 30 minutes before making sandwiches to thaw, or thaw in microwave for 30 seconds.
    • Place lid on pan to melt cheese more quickly and prevent bread from burning. You can also use the lid to press down the sandwich if it's too tall.
    • Other great add-ins: cucumbers, sprouts, spinach, granny smith apple, ham, etc.

    FAQ

    What cheese goes best with turkey?

    This brie cheese is so good with turkey, but if you don't have any on hand, sharp cheddar, provolone, and pepper jack would all be great. Turkey has such a mild flavor, that you really could pair any cheese with it.

    What condiments do you put on a turkey sandwich?

    If you don't have blueberries, or this blueberry mustard doesn't sound amazing to you, cranberry sauce post Thanksgiving, or the traditional mustard (yellow, dijon, or whole grain) & mayo.

    How can I repurpose?

    Enjoy your turkey brie sandwich as a wrap, or with crackers instead of bread as a snack-y style lunch.

    What can I make with leftover ingredients?

    • Turkey: add some to eggs, or make different sandwiches
    • Brie: bake it with honey and figs.
    • Arugula: Beet and Arugula Salad, Pear and Prosciutto Flatbread Pizza
    • Bread: Serve it with any of these soups (like curry pumpkin, asparagus soup, and pumpkin turkey chili)

    Grilled Turkey and Brie Sandwich with Wild Blueberry Mustard

    Give your Thanksgiving leftovers a delicious flavor-packed punch with this easy wild blueberry mustard. Just frozen wild blueberries, whole grain mustard, and chia seeds to thicken it up.

    Ingredients

    • 1 tablespoon frozen Wild Blueberries thawed
    • 1 teaspoon whole grain dijon mustard
    • ¼ teaspoon chia seeds
    • 2 slices brie sliced thin
    • 3 oz turkey breast sliced
    • 2 slices your favorite bread
    • butter or cooking spray to cook sandwich in
    • 1 handful arugula

    Instructions

    • Make blueberry mustard by combining 1 tablespoon thawed wild blueberries, 1 teaspoon dijon mustard, and ¼ teaspoon chia seeds. Set aside to thicken. 
    • Make sandwiches by placing 2 slices brie, 2 oz turkey on top of one slice of bread, place second slice of bread on top. Add butter or cooking spray to a small saucepan, and heat over medium heat. Grill sandwich in small saucepan until cheese is melted, about 3-4 minutes on each side.
    • Remove sandwich from saucepan and place on serving plate. Remove top slice of bread, and set on the side. Spoon wild blueberry mustard on top of turkey and cheese, then add a handful of arugula to sandwich. Replace top slice of bread. Eat immediately. Pair with chips &/or salad.
