This sandwich is a great way to use up leftover turkey from Thanksgiving, or just make it for an easy weekday lunch. If you need Thanksgiving side dish ideas, make sure to check these recipes out.
This blueberry mustard is so good, you'll definitely want to make extra. Dip french fries and veggies in it. And definitely have some for when you make chicken burgers.
What makes this sandwich so good?

- Wild Blueberries
- Whole grain dijon mustard
- Chia seeds
- Brie cheese
- Turkey breast sliced
- Whole grain or other bread
- Arugula
How do I make this turkey and brie sandwich?

Make blueberry mustard by combining 1 tbsp thawed wild blueberries, 1 tsp whole grain mustard, and ¼ tsp chia seeds. Set aside to thicken.
Expert Tip: Use regular frozen blueberries if you can't find wild blueberries, but know that they won't be as flavorful or tart as the wild variety.
Expert Tip: Remove blueberries from freezer 30 minutes before making sandwiches to thaw, or thaw in microwave for 30 seconds.

Make sandwiches by placing 2 slices brie, 2 oz turkey on top of one slice of bread. Then place second slice of bread on top.

Add butter or cooking spray to a small saucepan, and heat over medium heat. Grill sandwich in small saucepan until cheese is melted, about 3-4 minutes on each side.
Expert Tip: Place lid on pan to melt cheese more quickly and prevent bread from burning. You can also use the lid to press down the sandwich if it's too tall.

Remove sandwich from saucepan and place on serving plate. Remove top slice of bread, and set on the side. Spoon wild blueberry mustard on top of turkey and cheese, then add a handful of arugula to sandwich. Replace top slice of bread. Eat immediately. Pair with chips &/or salad.

FAQ
What cheese goes best with turkey?
This brie cheese is so good with turkey, but if you don't have any on hand, sharp cheddar, provolone, and pepper jack would all be great. Turkey has such a mild flavor, that you really could pair any cheese with it.
What condiments do you put on a turkey sandwich?
If you don't have blueberries, or this blueberry mustard doesn't sound amazing to you, cranberry sauce would be awesome post Thanksgiving, or just stick to the traditional mustard & mayo. A good dijon or whole grain mustard would add a nice complex flavor to this simple sandwich.
