    Steak and Shrimp Fajitas for One

    How many times do you run out of the protein you cooked before the veggies or other components in a dish?

    No need to have a meal that's too small or not know what to do with your leftovers. Add a couple shrimp and you've got enough to feel satisfied.

    Make Flat Iron Steak Fajitas and add shrimp to fill out your leftovers for a new meal-steak and shrimp fajitas.

    Batch cooking a few servings of steak is a great way to cook for one, it saves you time, and you can use it in a few different recipes.

    Ingredients

    Scroll down to the steak and shrimp fajitas recipe card for the amounts of each ingredient, but here's a quick description of what's in this recipe.

    • Leftover Flat Iron Steak, peppers/onions: You can cook the steak, vegetables, and shrimp together or use leftover steak/vegetables and add shrimp for a different meal. Use this Flat Iron Steak Fajitas recipe.
    • Shrimp: It's such an easy protein to add to dishes. Throw frozen or thawed shrimp on the pan, and it's ready in just a few minutes. Once it curls and turns pink on each side, it's done!
    • Lime juice: A fresh squeeze of lime juice adds a nice acidic touch to steak and shrimp fajitas.
    • Tortillas: Enjoy your fajitas in your favorite type of tortillas. You can use a couple taco sized tortillas, fajita sized, or one burrito sized tortilla. Whatever you have/want!

    Leftover Steak + Fresh Shrimp Instructions

    1.Reheat steak fajitas ingredients. While reheating ingredients, place a small saucepan over medium heat. Once hot place frozen shrimp on saucepan, pour lemon juice and sprinkle a pinch of salt over shrimp.

    Cover with lid and steam for 3 minutes.

    2. Turn shrimp and just cook until both sides are pink. Remove when both sides are pink. Serve with remaining vegetables and sides from steak fajitas.

    Storage/Reheating Tips

    Store remaining steak and vegetables in an airtight container in the fridge, for about a week. Shrimp isn't that great reheated, so I recommend making enough for one meal at a time.

    You can store and reheat similar to the steak and vegetables though, they just might get tough.

    Substitutions/Tips

    • Use Flat Iron Steak Fajitas recipe to make steak, red bell peppers, and onions. 
    • If using fresh shrimp, cook 1-2 minutes on each side and watch carefully (they cook FAST)
    • Optional toppings: refried beans, salsa, guacamole, cheese, cilantro, corn, Spicy Pickled Onions, other sauteed vegetables.

    How do you keep steak tender for fajitas?

    Marinade it before cooking and cook at a higher heat, for less time. Both of these tips will help you cook delicious, tender steak for steak and shrimp fajitas.

    What toppings go on fajitas?

    Cheese, fresh salsa, and guacamole or avocado, and cilantro are great with fajitas. A few other topping ideas include: corn, jalapeno peppers, other sauces, or sour cream.

    Repurpose your fajitas

    Serve leftover steak and shrimp fajitas ingredients in a burrito or over rice and lettuce for a fajita burrito type bowl. You can add the same toppings to either.

    What to do with leftover ingredients

    When you're cooking for one, you often have leftover produce, cans of whatever ingredient, etc. Here are a couple ideas on how to use up the leftover ingredients. It'll help you save money by wasting fewer ingredients.

    • Shrimp: Easy Shrimp Sheet Pan Dinner or Cajun Shrimp & Vegetable Packets
    • Red pepper: Vegetarian Hash, Red Wine Vinegar Coleslaw, or Melanie's 30 Minute Pumpkin Chili
    • Onions: Spicy Pickled Onions (use any kind of onion), Individual Meatloaf, and Chicken Soup for One.
    • Tortillas: Healthy Breakfast Tacos, Veggie Quesadilla

    • 2-3 frozen shrimp or fresh
    • 1 tablespoon lime juice
    • pinch salt
    • tortillas
    • salsa (optional)
    • shredded cheddar cheese (optional)
    • guacamole or sliced avocado (optional)
    • cilantro (optional)

    Instructions

    • Reheat steak fajitas ingredients. While reheating ingredients, place a small saucepan over medium heat. Once hot place 2-3 frozen shrimp on saucepan, pour 1 T lemon juice and sprinkle a pinch of salt over shrimp. Cover with lid and steam for 3 minutes.
      If using fresh shrimp, watch closely, you'll probably just need to cook them for 2-3 minutes total.
    • Turn shrimp and just cook until both sides are pink. Remove when both sides are pink. 2nd side may only take 1-2 minutes to cook through. Serve with remaining vegetables and sides from steak fajitas.
