    Single Serving Frozen Shrimp Foil Packet in the Oven

    Lots of people don't feel like it's worth it to cook for one. Lots of times it's because cooking can be complicated and takes time to clean up. This flavorful shrimp foil packet in the oven is perfect: quick prep and quicker clean-up.

    This recipe has become a favorite of my mom's. It's so easy, packed with flavor, and can be made in the oven or camp stove if you're camping. It's seriously so good and includes delicious summer zucchini and corn on the cob.

    It's also a great recipe, because it's as easy to make extra servings of. This isn't a great recipe for leftovers, but if you're feeding more than yourself, make extra servings. Divide each serving into it's own foil packet.

    Ingredients

    • Frozen shrimp: Definitely use frozen shrimp so they won't get overcooked, and the extra moisture will help steam all the other ingredients.
    • Andouille sausage
    • Corn on the cob: intact corn is the best option for this shrimp foil packet in the oven as it'll steam well. Corn kernels are just very small for the rest of the ingredients.
    • Yukon gold potatoes: These are my favorite potatoes, cut them small so they don't have to be cooked for longer. You can use russet potatoes too.
    • Olive oil
    • Cajun seasoning
    • Parsley: for garnish, you don't have to add it.

    1. Preheat the oven to 425 degrees or your grill. While oven or grill is preheating, cut 1-2 sheets of tin foil about 14-16 inches long. (1 sheet heavy duty foil, 2 sheets regular foil).

    2. Start to prepare your ingredients by quartering an ear of corn. Do this by scoring the cob with a knife and break it into 3-4 pieces.

    3. Cut Yukon gold or russet potatoes into 6-8 similar sized bites, also cut zucchini into bite sized pieces. Smaller potatoes will cook more quickly in your shrimp foil packet in the oven.

    If you don't have zucchini, use another seasonal vegetable.

    4. Next, slice andouille sausage with a serrated knife. Add all remaining ingredients (including frozen shrimp) into large mixing bowl.

    I highly recommend using frozen shrimp, the water from them will help steam your shrimp and potatoes. Plus fresh shrimp cook very fast and may get overcooked.

    5. Pour olive oil and sprinkle cajun seasoning over ingredients, mix until well combined. 

    6. Place tin foil on baking sheet or flat counter to assemble the packet. Pour ingredients into the center of your tin foil sheet. Pull up sides and fold over to create a packet.

    7. Place packet in a 425 degree oven and cook for 20-25 minutes. Check doneness of potatoes. Remove when potatoes are tender. Serve shrimp foil packet in the oven immediately.

    Storage/Reheating Tips

    Store leftover shrimp foil packet in foil or an airtight container in the fridge for about a week.

    Because there is shrimp and zucchini in this frozen shrimp foil packet recipe, it won't freeze well.

    To reheat, remove from foil and place in a container with lid or cover and microwave until warm. You can pan fry the meat and vegetables too for crispy edges and browned flavor.

    Substitutions/Tips

    • Use Yukon gold or russet potatoes. And chop small, so they cook quicker. They can take forever!
    • Use whatever vegetables you have on hand. Zucchini is best & easiest, but all veggies can go nearly everywhere!
    • Make sure to use frozen shrimp, they will cook perfectly and contribute some liquid to your shrimp foil packet in the oven.
    • You can also cook this packet up on the grill or over a fire.
    • Other great add-ins: other vegetables would be good to add to this shrimp foil packet in the oven.

    Keep your food in the foil packet and place it in a 350 degree oven. Cook it until all ingredients are warmed through.

    Ingredients

    • 1 ear fresh corn
    • ¼ pound yukon gold potatoes
    • ½ medium zucchini
    • 1 link andouille sausage
    • ¼ pound frozen shrimp
    • 1 tablespoon extra virgin olive oil
    • 1 teaspoon cajun seasoning
    • salt & pepper to taste

    Instructions

    • Preheat oven (or grill) to 425 degrees. Cut 1-2 sheets of tin foil (about 14-16 inches long). Use 1 heavy duty sheet per packet, or 2 if not heavy duty tin foil. Set aside. 
    • Quarter ear of corn by scoring the cob and breaking it into 4 pieces. Cut ¼ pound potatoes into 6-8 similar sized bites, also cut ½ whole zucchini into bite sized pieces. 
    • Slice one andouille sausage with a good serrated knife. Add all ingredients (including ¼ pound frozen shrimp) into large mixing bowl.
    • Pour 1 Tablespoon olive oil and sprinkle 1 teaspoon cajun seasoning over ingredients, mix until well combined. 
    • Place tin foil on baking sheet or flat counter to assemble packet. Pour mixture into center of tin foil sheet. Pull up sides and fold over to create a packet. Place packet in oven and cook for 20-25 minutes. Check doneness of potatoes. Remove when potatoes are tender. Serve immediately.
