    Apple Pie Overnight Oats (with yogurt)

    Overnight oats are one of the best quick breakfast options. They just take a few minutes to prep either the night before or early in the week, and you're left with easy to eat, tasty oatmeal for breakfast.

    These apple pie overnight oats can be eaten hot or cold, out of a jar, in a bowl, on your way to work, at your desk.... really they are so versatile. Let me tell you, taking the extra step to heat the apples really makes them so so delicious.

    They're definitely a busy morning life saver, and taste like you put effort into them. But you didn't put much effort into them.

    The best part about overnight oats is the fact that you can make lots of different flavor combinations, just like apple pie overnight oats. All of them are really easy.

    Make one serving for breakfast or a few for a few super easy breakfasts. I'd just recommend making them in separate containers for ease. But you can totally make them in one and dish out how much you want each morning.

    • Oats: old fashioned or rolled oats (they're the same) are best in this recipe.
    • Milk: use your favorite type of milk
    • Apple: use your favorite type of apple. I prefer crisp, slightly tart apples for this recipe
    • Yogurt: use plain or vanilla yogurt. Any thickness
    • Ground flaxseed: it adds a bit of fiber to this recipe.
    • Cinnamon
    • Vanilla

    1. Chop an apple.

    2. Add apple, maple syrup, cinnamon, and salt to a medium microwave safe bowl. Mix and microwave the cinnamon apples for 60 seconds.

    3. Layer oats, milk, yogurt, ground flax, and cooked apples into an airtight container, like a mason jar or plastic bowl.

    Note that the yogurt acts as a barrier, so if you add oats, then yogurt, most of the milk/liquid you add after won't reach the oats and they won't soften. If you accidentally add it after the yogurt, just stir everything up to combine.

    4. Refrigerate for 4+ hours, your apple pie overnight oats can be stored in the fridge for 5 days or about a week.

    Storage/Reheating Tips

    These apple pie overnight oats need to be refrigerated for at least 4 hours, so the oats can soften. They will last about 5 days, or about a week. I wouldn't recommend freezing these oats.

    This overnight oats recipe is good cold, but I really enjoy them warmed up. You can heat them in the microwave, covered in a microwave safe cover.

    Substitutions/Tips

    • Old fashioned oats or rolled oats are best for overnight oats, quick cook oats and steel cut oats don't work as well.
    • Tart apples are great in this apple pie overnight oats recipe, pink lady, granny smith, braeburn or other tart apples would work.
    • If the milk isn't reaching your oats, stir them before storing. The oats need to absorb the liquid to soften and become creamy.
    • Adjust the amount of cinnamon, maple syrup, and salt to your preference.
    • Add a pinch of cinnamon to your overnight oats for more flavor.
    • Optional add-ins: additional ground cinnamon, nutmeg, dried fruit, chopped nuts, peanut butter or almond butter, chia seeds would all be good add ins for this apple pie overnight oats recipe.

    How to make apple pie overnight oats?

    These oats are easy to make, just cook apples with cinnamon, maple syrup, and salt in the microwave. Then add your apples, yogurt, oats, and milk to an airtight container and refrigerate for at least 8 hours.

    What is the right time to eat oats?

    You can eat oats any time of the day, but they're mostly eaten in the morning for breakfast in the United States. They're great in recipes for snacks too.

    What are the best oats for overnight oats?

    Rolled oats/old fashioned oats (they're the same) are typically best for overnight oats. Quick cooking oats break apart easier, and steel cut may not be soft enough to eat cold.

    Repurpose this recipe

    You can cook the oats from your apple pie overnight oats instead of letting them sit in the fridge overnight and add the apple topping. You can also add the apple topping to yogurt with granola or plain yogurt.

    Ingredients

    Topping

    • 1 whole apple pink lady or other tart/sweet apple
    • 2 teaspoons maple syrup
    • ½ teaspoon cinnamon
    • pinch of salt

    Overnight Oatmeal

    • ¾ cup overnight oats
    • ¾ cup milk
    • ¼ cup plain or vanilla yogurt
    • 1 teaspoon ground flax
    • Optional add-ins: cinnamon, chia seeds, chopped nuts, dried fruit

    Instructions

    • Chop a whole apple into bite sized pieces.
    • Transfer to a medium microwave safe bowl. Add in 2 teaspoons of maple syrup, ½ teaspoon ground cinnamon, and a pinch of salt. Stir and microwave for 60 seconds, until apples soften.
    • Add ¾ cup old fashioned oats, ¾ cup milk, ¼ cup yogurt, 1 teaspoon ground flax to an airtight container. Top with cooked apples. Refrigerate overnight or up to 5 days. Eat hot or cold.

    Notes

    • The yogurt acts as a barrier, so either add yogurt first, then oats and the remaining ingredients, or add milk before yogurt. You could also just stir everything together too. Added liquid needs to reach the oats to soften them.
    • Tart apples are great in this recipe, I used a pink lady apple. Granny smith, braeburn or other tart apples would work.
    • Adjust the amount of cinnamon, maple syrup, and salt to your preference.
    • Add a pinch of cinnamon to the overnight oats for more flavor.
