Chia pudding makes for an easy breakfast or snack with a fun texture.

Chia seeds absorb liquid to create a gel like texture with beads inside. They're easy to keep on hand, are versatile in more than just chia pudding recipes (like this chia pudding with peanut butter).

Similar to oats, you can add lots of toppings to them to make each batch as different as you'd like.

I prefer making my chia pudding with milk and toppings because chia seeds don't really have a flavor. I like adding some sort of protein like peanut butter or Greek yogurt, fruit, and other ingredients to add lots of flavor. The options are endless.

    Ingredients

Scroll down to the peanut butter chia pudding recipe card for the amounts of each ingredient, but here's a quick description of what's in this recipe.

    • Chia seeds
    • Milk
    • Vanilla extract
    • Banana
    • Peanut butter
    • Dark chocolate chips

    Instructions

Scroll down to the peanut butter chia pudding recipe card for more detailed instructions. Here's a quick overview + photos to see how to make this recipe in general.

chia seeds and water in a glass bowl

Mix together chia seeds and water in a medium sized bowl. Let sit on counter for 10-15 minutes. (do not let sit in fridge-it gets goopy). And stir occasionally.

chia pudding with milk and vanilla in a glass bowl

Add milk and vanilla extract after chia seeds have set, stir together.

Top with mashed ripe banana, peanut butter, and chopped chocolate chips to make chia pudding with banana, peanut butter and chocolate. Add additional sweetener, if desired.

side shot of chia pudding in a short glass

Enjoy your peanut butter chia pudding immediately, or refrigerate in a airtight container for later.

    Storage/Reheating Tips

Store leftover peanut butter chia pudding in an airtight container in the fridge. It should last about a week.

This recipe may be able to be frozen, but I haven't tried it. It's likely best enjoyed within a couple of days though.

    Substitutions/Tips

    • Occasionally stir chia pudding and break up globs of chia seeds while it's sitting out so it doesn't get gloppy.
    • The higher fat milk you use, the creamier the pudding will be. But just use what you've got on hand for the easiest recipe.
    • Use a ripe banana so it's easily mashed, and use your favorite type of peanut butter & chocolate chips. I like creamy peanut butter & semi-sweet chocolate chips in this pudding.
    • Taste and feel free to add some sugar if your chia pudding isn't sweet enough.
    • Other great add-ins: Dried or fresh fruit; sugar, maple syrup, or honey for sweetness.

    FAQ

Is chia seed pudding good for you?

Instead of categorizing foods as healthy or not, try focusing on how food tastes, what feelings it brings up, and enjoyment you feel eating it. If eating healthy enough is stressful, consider working with a non-diet dietitian.

Can you put peanut butter in chia pudding?

Peanut butter is a delicious addition to chia pudding. This peanut butter chia pudding is flavorful and super creamy thanks to the peanut butter.

Is chia pudding a good late night snack?

It depends, try eating it and see if it affects your sleep. If my clients are hungry late at night, I encourage them to add some protein to what they're eating, to fill them up.

Lots of chia pudding recipes have protein from dairy added, and peanut butter!

What to do with leftover ingredients

When you're cooking for one, you often have leftover produce, cans of whatever ingredient, etc. Here are a couple ideas on how to use up the leftover ingredients. It'll help you save money by wasting fewer ingredients.

    • Chia seeds: you can use them in so many different recipes!) Grilled Turkey & Brie Sandwich, Triple Berry Chia Pudding, Ham & Swiss Sliders.
    • Peanut butter: Peanut Butter Greek Yogurt Dip, Strawberry Banana Peanut Butter Smoothie, Small Batch Peanut Butter Cookies, Protein Balls with Peanut Butter and Chocolate.
    • Banana: Bananas Foster Pancakes, Banana Blueberry Oatmeal Muffins, Apple Banana Spinach Smoothie, Strawberry Banana Milkshake, include it in a Waffle Bar.
