    Ever had peanut butter chia pudding? This PB chia pudding with bananas and chocolate is perfect as breakfast, a snack, or dessert any day of the week.

    How will this peanut butter chia pudding make your life better?

    A simple snack or dessert made with ingredients you've got on hand is exactly what you need. You can make this easy peanut butter chia pudding, a Triple Berry Chia Pudding, PB yogurt Dip, or Chocolate Pudding for a quick snack or dessert that satisfies your sweet tooth.

    What makes this chia pudding so good?

    • Chia seeds
    • Milk
    • Vanilla extract
    • Banana
    • Peanut butter
    • Dark chocolate chips

    How do I make peanut butter chia pudding?

    Mix together ⅛ c chia seeds and ¾ c water in a medium sized bowl. Let sit on counter for 10-15 minutes. (do not let sit in fridge-it gets goopy). And stir occasionally.

    Expert Tip: Occasionally stir chia pudding and break up globs of chia seeds while it's sitting out so it doesn't get gloppy.

    Add ¼ c milk and ½ teaspoon vanilla extract after chia seeds have set, stir together.

    Expert Tip: The higher fat milk you use, the creamier the pudding will be. But just use what you've got on hand for the easiest recipe.

    Top with ½ mashed banana, 1 T peanut butter, and 1 T chopped chocolate chips.

    FAQ

    Can I put chia seeds in my cereal?

    Chia seeds are about the same size as poppy seeds so they're totally edible raw. They'll add a nice crunch to your cereal! Highly recommend!

    Can you put chia seeds in hot milk?

    Yes, follow the same instructions in this recipe: add them to liquid, let them stand but just for 10-15 minutes. Remember to stir and break up the clumps while it's sitting.

    Is chia seed pudding healthy?

    I don't like to categorize foods as healthy or not because it can lead us to make eating decisions based on nutrition more than anything else, and that's not necessarily 'healthy' but it can be helpful to realize what nutrients are in different foods so we can eat a variety of foods. Chia seeds are a good source of fiber which is great for our digestive health, they also have some protein in them and other nutrients that many Americans don't get enough of like calcium.

    What can I make with leftover ingredients?

    • (chia seeds-you can use them in so many different recipes!) Grilled Turkey & Brie Sandwich, Triple Berry Chia Pudding, Ham & Swiss Sliders.
    • (peanut butter) PB Caramel Sauce, Peanut Butter Granola, PB Greek Yogurt Dip
    • (banana) Peanut Butter Overnight Oats, Bananas Foster Pancakes, PB Banana Oatmeal, Overnight Oats with Yogurt, include it in a Waffle Bar.

    Peanut Butter Chia Pudding

    Peanut butter, banana, and chocolate all converge to create the most delicious breakfast that's sweet enough to enjoy for dessert too.

    • Small bowl

    Ingredients

    • ⅛ cup dry chia seeds
    • ¾ cup water
    • ¼ cup milk I used 1%
    • ½ teaspoon vanilla extract
    • ½ soft banana mashed
    • 1 tablespoon peanut butter
    • 1 tablespoon dark chocolate chips chopped
