We all need quick breakfasts, that's why I love this microwave egg in a cup. Grab a large-ish microwave safe cup (or bowl or mug), whisk eggs in it, add toppings and throw in the microwave a few minutes before you're ready to eat or head out. That's it!
Oh, and these eggs are so soft and fluffy. Like SO SOFT. I might like the texture better than cooking them on the stove. Wow.
Make sure to fill the cup/bowl about ½ full of egg mixture. If it fills over about ½ of the bowl, transfer to a bigger bowl. Just like cooking oats in the microwave, it will rise a lot while cooking. This will help you avoid a mess in the microwave.

- Eggs: Add 2-3 eggs, or how many you like in the morning.
- Milk: Helps you get nice fluffy microwave eggs in a cup

1. Crack eggs into cup, mix in milk, salt and pepper. Again, use a larger microwave safe bowl or cup or coffee mug or whatever. The eggs should only fill about ½ of the cup because it rises while cooking.
2. Mix in additional toppings, I like spinach and cheese. Or whatever I have in the fridge.
3. Microwave on high for 1.5-2 minutes. Or cook 30 seconds at a time longer, until they are mostly cooked through.
4. Top your microwave egg in a cup with desired fresh toppings, if applicable. Enjoy with toast and fruit for a delicious breakfast.
Storage/Reheating Tips
Microwave scrambled eggs are usually best immediately after cooking, but if you have leftovers, store in an airtight container in the fridge for about a week. To reheat, microwave in a container with a lid. Add additional toppings if desired.
Substitutions/Tips
- Whisk egg and add toppings at night, to quickly make your eggs in the morning.

Microwave Egg in a Cup
Equipment

Ingredients
- 2-3 eggs
- 2 tablespoons milk of choice
- pinch of kosher salt and pepper or to taste

Instructions
- Crack 2-3 eggs into a microwave safe cup. Add 2 Tablespoons milk, beat with fork. Make sure it's only ½ full.
- Add desired toppings such as cheese, protein, vegetables, etc.
- Place egg mixture in the microwave. Cook on high for 1.5-2 minutes. Stir and enjoy. If still really undercooked, cook another 30-45 seconds. If mostly cooked remove from microwave, it'll continue to cook just a bit.
- Top with sliced tomato, if desired. Enjoy.

- Make sure to use a cup, mug, or bowl that's big enough that the egg mixture only fills about ½ of the container. It will rise when cooking, then deflate a bit after it's done.
