    Single Serving Bacon Wrapped Chicken (hack)

    This easy single serving bacon wrapped chicken is the best way to enjoy fall and winter flavors without much effort at all. It just takes about 10 minutes hands on time, and you can let your oven do 90% of the work.

    What are the worst parts of cooking at home? Prepping and cleaning up.

    This single serving bacon wrapped chicken sheet pan dinner is perfect because it takes just a couple minutes to assemble and the same to clean up since it's all cooked on one pan. Plus you get leftovers.

    Maybe bacon wrapped chicken is a misnomer, it's not technically wrapped in bacon. But taking the extra time to wrap the chicken only makes it look nicer. I'm all for the easiest way to get something tasty. Lying the bacon on top of the chicken does that.

    Seriously, try this method. Baked chicken can easily dry out, but it doesn't with the bacon on top. Bacon fat infuses flavor and juiciness into the chicken. Use one or two slices, it doesn't matter.

    Also, since we're baking the chicken already, might as well toss some vegetables on the pan and make an *almost whole meal out of it. Serve with mashed potatoes or crusty bread for an actual whole meal.

    One pan dinners are a life saver for busy weeknight meals. Make extra servings for leftovers if you'd like.

    Ingredients

    • Chicken
    • Bacon
    • Brussels sprouts/Yellow onion: I like roasted brussels sprouts, especially with some maple syrup on top. But you can use whatever vegetables you like.
    • Maple syrup: A drizzle of maple syrup (and sprinkle of salt) adds lots of flavor to plain brussels sprouts, seriously, it's so easy!

    Start making your chicken bacon dinner by preheating the oven to 350 degrees. Line sheet pan with parchment paper or a baking liner. Place 2 slices of bacon on sheet pan. Bake for 10 minutes.

    Remove from oven, increase temperature to 400 degrees F.

    Add chicken breast, chopped onion, and sliced brussels sprouts to pan. Drizzle maple syrup over ingredients, season with a sprinkle of salt and pepper.

    Toss ingredients to evenly distribute syrup and bacon grease over all ingredients. 

    Return to oven (even if it's not done heating up to 400 degrees). Roast for 30 minutes or until brussels sprouts are crispy and browned.

    Remove from oven, slice bacon wrapped chicken on a cutting board and transfer to a plate to eat immediately.

    Serve With

    A grain/starch like: Pasta, Rice, Cheesy Garlic Mashed Potatoes, Easy Frozen Butternut Squash is great with this single serving bacon wrapped chicken.

    Or swap the brussels sprouts for any of these vegetables:

    • Roasted Broccoli and Mushrooms
    • Frozen Roasted Green Beans for One
    • Asparagus and Brussels Sprouts for One
    • Roasted Garlic Mushrooms with Pan Sauce
    • Sheet Pan Broccoli for One
    • Microwave Frozen Broccoli

    Storage/Reheating Tips

    Store leftover bacon wrapped chicken and vegetables in an airtight container in the fridge for about a week. The best way to reheat this chicken is to broil it or cook in the Air Fryer so the bacon doesn't soften too much. But you can microwave it too.

    You should be able to freeze leftover chicken, bacon, and vegetables and maintain the texture well enough. Just store in an airtight container.

    Substitutions/Tips

    • Bacon wrapped chicken looks really nice, but if you don't want to take the time to wrap the chicken, just place a slice or two of bacon on top of the chicken, like I did!
    • Place bacon on top of chicken when cooking so chicken doesn't dry out.
    • Not a fan of brussels sprouts? Swap them out for broccoli, cauliflower, carrots, or other veggies.
    • Check temperature of the thickest part of the chicken breast with an instant read thermometer. Chicken is done once it reaches 165 degrees.
    • Enjoy with potatoes, rice, pasta, or crusty bread.
    • Make extra servings of this chicken dish for leftovers.  
    • Other great add-ins: Chopped nuts are a great addition to bacon wrapped chicken or vegetables you serve it with. Either way.

    FAQ

    How long does it take to bake a chicken breast at 400 degrees?

    It just takes 15-20 minutes to bake chicken, uncovered. Chicken is done when it's 165 degrees.

    Can you eat bacon with chicken?

    Bacon is delicious with chicken, it adds a crunchy texture, salty and sweet flavors to your chicken. Make bacon wrapped chicken or fake wrap it like in this bacon wrapped chicken recipe.

    Can I bake chicken and veggies in the same pan?

    Absolutely. Some veggies take longer to cook than the chicken, so make sure to cut them into smaller chunks (like potatoes, brussels sprouts, beets, etc)

    What vegetables go with chicken?

    Any vegetable will taste great with chicken. I'd recommend starting with seasonal vegetables because they'll be the tastiest and least expensive in season.

    Chop up leftover bacon wrapped chicken and vegetables, serve over a bed of lettuce, with rice, or over pasta for a different dinner, or for leftovers.

    What can I make with leftover ingredients?

    When you're cooking for one, you often have leftover produce, cans of whatever ingredient, etc. Here are a couple ideas on how to use up the leftover ingredients. It'll help you save money by wasting fewer ingredients.

    • Chicken: Grilled Chicken Burgers, Chicken Salad Pitas, & Curried Chicken & Broccoli.
    • Bacon: Broccoli Salad with Grapes, No-Mayo Potato Salad, Freezer Breakfast Sandwiches.
    • Brussels Sprouts: Maple Mustard Salmon with Brussels Sprouts, Rustic & Potato Au Gratin, and Pan Fried Pork Chops with Apples.
    • Maple Syrup: Maple Mustard Salmon with Brussels Sprouts, Pancakes for One, Waffles for One.

    Ingredients

    • 1 chicken breast
    • 2 strips bacon
    • ½ pound brussels sprouts trimmed and washed
    • ½ whole yellow onion chopped
    • 2 teaspoons maple syrup
    • salt and pepper to taste

    Instructions

    • Preheat oven to 350 degrees. Line sheet pan with parchment paper or a baking liner. Place 2 slices of bacon on sheet pan. Bake for 10 minutes.
    • Remove sheet pan from oven, increase temperature to 400 degrees F. 
    • Add 1 large chicken breast, ½ whole onion (chopped), and ½ lb sliced brussels sprouts to pan. Drizzle 2 teaspoons maple syrup over ingredients, season with a sprinkle of salt and pepper. Toss ingredients to evenly distribute syrup and bacon grease over all ingredients. 
    • Return to oven (even if it's not done heating up to 400 degrees). Roast for 30 minutes or until brussels sprouts are crispy and browned.
    • Remove from oven, slice chicken and bacon on a cutting board and transfer to a plate to eat immediately.

      Wondering if the chicken should be bone-in? Seems like a long cooking time for boneless. Don't want to try boneless and have them dry. Does it matter? What did you use?

        good idea Betty! Thanks! Mine did come out a bit dry, especially after reheating it. You could add the chicken when there's just 25-30 minutes left, or cook it in parchment paper to keep all the moisture in. I'm lazy, but this would be more beneficial so it doesn't get so dry

        ahhhh yay! good to hear, I may have force fed it to a brussels hating friend who said he liked it, but not sure if that was really what he thought. But, bacon does make lots of things more delicious, so it's possible.

      Sheet pan meals for the win! If it has bacon in it, I know it would be a winner in my house - my husband and 2 boys are bacon lovers! And I bet they might even like the Brussels sprouts, too!
