    Avocado Grapefruit Salad (for one)

    This easy and flavor packed avocado and grapefruit salad over winter greens is the perfect light salad for a quick side salad or dinner. Add some edamame, ham, or salmon to make it a full meal.

    I like to rely on pantry staples in my salads, like this grapefruit salad. Nuts, seeds, crunchies, and vinegars that I have on hand. Homemade salads can be BORING, but with crunchies and a good dressing, it won't be.

    This salad is packed with tasty winter flavors and is so easy. It's more of a side salad, so check out my recommendations to serve this salad with.

    Ingredients

    Scroll down to the avocado grapefruit salad recipe card for the amounts of each ingredient, but here's a quick description of what's in this recipe.

    • Baby spinach/kale mix: tender baby spinach and/or baby kale go well in this salad, but you can honestly use whatever greens you have on hand.
    • Grapefruit
    • Avocado
    • Pistachios: chopped pistachios go great with avocado, grapefruit, and spinach. But you can use chopped pecans, walnuts, almonds, cashews, etc.
    • Hemp hearts: hemp hearts add a nice texture to this easy grapefruit salad, you can swap them for another seed, or skip them.
    • Olive oil
    • White balsamic vinegar: this is mild-er than regular balsamic vinegar, which is nice on this light, refreshing salad. But you can use red wine vinegar, balsamic vinegar, or whatever you have on hand.
    • Orange juice: just a bit of orange juice adds some nice sweetness to this dressing. You can swap it for grapefruit or lemon juice, you may want to add a tiny bit of sugar to sweeten it up, if you'd like.

    Slice and peel grapefruit. Slice avocado in half, then remove pit.

    Make parallel slices in both sides of avocado, then slide spoon between skin and avocado to remove from avocado skin. Place avocado and grapefruit sections on top of greens. Add hemp hearts and chopped pistachios to salad.

    Make dressing by adding orange juice, olive oil, white balsamic vinegar, and a pinch of salt to the salad. Then pour over veggies.

    Serve with

    To make your grapefruit salad a full meal, add edamame, tofu, pork, ham, or salmon to it and serve with crusty bread.

    • Panko Tofu (just make the tofu and serve with your salad)
    • Baked Panko Chicken
    • Air Fryer Salmon
    • Baked Salmon in 'a Bag'

    Storage Tips

    Store leftover salad ingredients and dressing separately for best results. Since the salad ingredients are tender, they will wilt if stored after being dressed. You can store leftover produce in airtight containers in the fridge for about a week.

    Substitutions/Tips

    • Slice grapefruit however you feel comfortable. Use whatever greens you have on hand, it's great on lettuce, spinach, kale, arugula, etc.
    • Swap out hemp hearts for chia seeds or other seeds, same with pistachios-they can be swapped for other nuts.
    • Use fresh or concentrate orange or mandarin orange juice because they're sweeter than grapefruit juice.
    • Other great add-ins: bulgur or barley, croutons, sunflower seeds, other citrus would all be good additions to this grapefruit salad etc.

    FAQ

    What goes good with grapefruit?

    According to the Vegetarian Flavor Bible, grapefruit goes well with avocados, ginger, honey, salads, yogurt, and many other foods/flavorings.

    It's great in this grapefruit salad with avocado, pistachios, and orange juice dressing, for example.

    How to cut a grapefruit for salad?

    I learned from my grandpa, you peel the outside like an orange, then grab a knife and slice the membrane (the one where the seeds grow) of each section. Peel back each membrane and place in a bowl.

    I like to quarter the grapefruit, then peel the pith away. Remove as much as you feel you need to get the sweetness you want. Now it's ready to add to your salad.

    What to serve with grapefruit salad?

    You can add some grains and more protein to a grapefruit salad to make it more satisfying, or serve it with a simple protein (like pork chop, chicken breast, salmon, or tofu) and grain like crusty bread.

    Serve leftover grapefruit salad over hearty grains like bulgur or barley and enjoy as a grain bowl. Or add different proteins to it.

    What can I make with leftover ingredients?

    When you're cooking for one, you often have leftover produce, cans of whatever ingredient, etc. Here are a couple ideas on how to use up the leftover ingredients. It'll help you save money by wasting fewer ingredients.

    • Spinach/greens: Kale Pecan and Apple Salad, Beet & Arugula Salad, Summer Berry Salad, Strawberry Salad with Balsamic Dressing, and this Simple Sauteed Kale Salad

    Avocado Grapefruit Salad (for one)

    Ingredients

    • 2 cups baby spinach/kale mix
    • 1 whole grapefruit, sectioned and peeled
    • ½ medium avocado sliced
    • 1 tablespoon pistachios
    • 1 teaspoon hemp hearts
    • 2 teaspoons extra virgin olive oil
    • ½ teaspoon white balsamic vinegar
    • 2 teaspoons orange juice
    • pinch salt
    • pepper to taste

    Instructions

    • Slice and peel 1 whole grapefruit. Slice 1 whole avocado in half, then remove pit.
    • Make parallel slices in both sides of avocado, then slide spoon between skin and avocado to remove from avocado skin. Place avocado and grapefruit sections on top of 2 cups greens.
    • Add 1 teaspoon hemp hearts and 1 Tablespoon chopped pistachios to salad.
    • Make dressing by adding 2 teaspoon orange juice, 2 teaspoon olive oil, ½ teaspoon white balsamic vinegar, and a pinch of salt to the salad. Then pour over veggies.
    • To make it a full meal, add edamame, tofu, pork, ham, or salmon to salad and serve with crusty bread.

      What a lovely memory of your Grandpa.

      This is a delicious sounding salad, and I love the colours. A really tasty combination of flavours and textures. I have found that putting citrus fruit in hot water for a few minutes helps when it comes to taking off the pith.
