    Single Serving Pizza

    A single serving pizza is the perfect weeknight dinner for one. Use premade dough or make your own Single Serving Pizza Dough. This simple recipe takes about 20 minutes, and you can add any toppings you have on hand!

    Pizza is one of my favorite foods. It's comforting, nostalgic, and you can add a million different toppings. If you love pizza too, and want a simple pizza recipe, this single serving pizza recipe is the recipe for you.

    Of course you can add your favorite toppings, use whatever crust you have/like. You could make your own small batch pizza dough, use a premade one, pita, flatbread, or other. Divide a full dough recipe into 3-4 portions. Freeze for later.

    If you're using a homemade or store bought pizza dough, I recommend baking it at 425 degrees F for 12-15+ minutes, depending on toppings. I found, through testing, LOTS of testing, that this is perfect for a chewy crust with crisp edges.

    This personal pizza recipe is super simple. Pizza sauce, mozzarella cheese, and pepperoni. I was given leftover pepperoni, and the timing was great for this pizza. Use what you have/like.

    Ingredients

    • Pizza Dough: There are lots of options here, make a simple Single Serving Pizza Dough recipe, buy one at the store (it might not be single serving), or use pita or flatbread.
    • Pizza Sauce: Get some premade pizza sauce, freeze leftovers for later; or add lots of tomato paste (and maybe more seasonings) to spaghetti sauce, or make your own.
    • Cheese: I prefer fresh mozzarella or the low moisture mozzarella found in a block. The small mozzarella balls may have too much moisture, so squeeze some out. They taste quite different, so use whichever you have/prefer.
    • Pepperoni/Toppings: Use whatever toppings you like or have on hand. You can add leftover protein/vegetables or stick with a simple cheese pizza. See additional pizza recipes below this recipe for more ideas.

    1. Preheat oven to 425 degrees F. Roll out pizza dough on a lightly floured surface. Carefully transfer to a floured or sprayed baking sheet.

    If you're using this Single Serving Pizza Dough Recipe, roll it out so it's about as big as a ¼ size baking sheet/the small one. I preferred rolling out the dough to just under ¼ inch thick. Rolling it out more than that made it too crispy.

    2. Evenly spread out pizza sauce, leaving about ¼-1/2 inch around edges for the crust.

    3. Distribute cheese and then toppings on top of sauce. Brush oil over crust if desired.

    You can sprinkle additional cheese over the toppings to help them stick to the pizza instead of fall off when you try to eat it.

    4. Bake at 425 Degrees F for 12-15 minutes. Cook until cheese is melted and bubbly.

    5. Cut your single serving pizza into slices, enjoy immediately.

    Storage/Reheating Tips

    Store any leftover single serving pizza in an airtight container for about a week. Reheat in the microwave, covered or in a convection oven or Air Fryer for a few minutes.

    You can freeze it for later too. Just store in individual bags, wrap, or containers.

    Substitutions/Tips

    • If the dough for your single serving pizza has been refrigerated, it's recommended to let it sit out for 30 or so minutes before rolling it out. It'll stretch out easier.
    • You can roll out the dough, top with olive oil or butter, garlic powder or minced garlic, and lots of parmesan cheese and bake at 425 degrees F for about 10-12 minutes for garlic bread like flatbread.
    • Bake on a baking sheet, pizza stone, or on a grill for an excellent crust!
    • Other great toppings: fresh or sauteed onions, zucchini, grilled chicken, corn, mushrooms, sausage, bell peppers, etc. See topping ideas above for more suggestions for your single serving pizza.

    FAQ

    How much dough do I need for a single pizza?

    I've found 5 ounces of risen dough to be about good for a single serving pizza. My Single Serving Pizza Dough recipe makes about that.

    What is one serving pizza?

    It really depends on how hungry you are. Instead of focusing on external factors to decide how much to eat, tune into your internal hunger/fullness cues. Start by dividing a 12-inch pizza by 2-3 for one serving.

    What's the easiest and best homemade pizza recipe?

    This single serving pizza is a great homemade pizza recipe. Use the simple pizza dough recipe listed above, and top with your favorite toppings. Pizza preferences are so individual, add what you like!

    What to do with leftover ingredients

    When you're cooking for one, you often have leftover produce, cans of whatever ingredient, etc. Here are a couple ideas on how to use up the leftover ingredients. It'll help you save money by wasting fewer ingredients.

    • Pizza Sauce: Mix in with diced tomatoes (add additional Italian seasoning, if desired) to use in these recipes: Canned Tomato Pasta, Chicken Parmesan Pasta.

    Ingredients

    • 1 whole Serving pizza dough see recipe in notes. Or buy premade dough or pita, or flatbread.
    • 3-4 Tablespoons Pizza sauce
    • ½+ cup shredded mozzarella cheese or fresh mozzarella to cover dough
    • ⅔ cup additional toppings like pepperoni, vegetables, etc
    • flour for rolling out dough
    • cooking spray for pan

    Instructions

    • Preheat oven to 425 degrees F.
    • Roll out pizza dough on a lightly floured surface, to just under ¼ inch thick. Or to desired thickness.
      The single serving pizza dough recipe makes for a great pizza crust when rolled out to be just smaller than ¼ baking sheet.
    • Transfer to sprayed or floured ¼ (or whatever size you have) baking sheet.
    • Spoon out 3-4 Tablespoons of pizza sauce over pizza. Spread it out evenly, leaving about ¼-1/2 inch edge on dough.
    • Top sauce with ½ cup (or more!) shredded mozzarella cheese and then desired toppings.
    • Bake in 425 degree F oven, for 12-15 or so minutes. Or until desired doneness.
    • Cut pizza slices and enjoy immediately.

    Notes

    • Single Serving Pizza Dough Recipe
    • Let refrigerated dough rest for about 15-30 minutes before rolling out, for best results.
    • Add your favorite toppings or leftovers to this pizza. 
    • I've found that using the large log of fresh mozzarella or low moisture mozzarella brick work well for this pizza. Neither make the pizza soggy when I baked them at 425 degrees F. Squeeze out extra moisture from cheese, if you'd like.
    • You could add lots of tomato paste to spaghetti sauce. And maybe some more Italian seasonings for a pizza sauce. Pizza sauce is typically thicker than spaghetti, which is helpful so you don't have a soggy pizza.
    • Add toppings then cheese, if you'd like the toppings to stay on better. The pizza looks better with toppings on top, but you will have fewer toppings fall off with cheese on top. Or sprinkle extra cheese over the toppings. That works too
    • Other Topping Ideas: there are so many. Add fresh or sauteed onions, mushrooms, sausage, bell pepper, grilled chicken, additional cheeses to name a few.
